I think E. Coli and other fecal bacteria survive freezing? So contaminated water -> contaminated produce -> consumer gets Major Runs :p

By the way, I didn't know what protein sparing was, so I checked and am a bit smarter now. I knew that in practice you can't store excess protein in the body, and that it's smart to eat meals consisting of all three macros, but the sciencey/theoretical side of things is always interesting.

I feel really happy and content for some reason. I think everything is going to turn out fine.

I had a sleepless night, couldn't sleep a wink. It's fine though - I wasn't anxious or anything, I just had a lot of thoughts that needed to be _thunk_.

Breakfast: Protein shake, 2-egg omelet with couscous and peas, a tomato. I might snooze off for a while...
 
I fell asleep around 9AM after berakfast and walking and feeding the dog, and slept until assistance came over at 1 PM. Did some chores and cooked. Lunch: a chickpea pancake with cheese and a side of spinach couscous and marinated white beans, a tomato, a protein shake.

I like how the fiber-rich lunch made me feel. The pancake was a bit tricky to make, the batter was too big and was hard to flip, I'll mix it up in a smaller cup next time and make a smaller one, but it tasted very nice.
 
Chickpea pancakes often need a good bit of oil (or screaming hot, well-seasoned cast-iron) to avoid stickage. Doesn't matter too much as long as it's tasty though :)

Yeah, my pitfall was that the batter laid too thick on the pan and it went perfectly in the middle, but the sides of the pan are cooler and some mushiness happened. So I'll make a smaller pancake next time.

It's funny to notice how much stuff I have in my "almost empty" cupboards. But that's also a sign that I'm in a good place mentally. It's not always possible for me to make a meal from scratch, and the fact that I can means that the recent changes in my life and positive things in my future to look for are really doing good for me.

Anxiety started to creep up, so I made myself a snack of oatmeal and frozen peas (served separately, lol).
 
I'm pretty sure I've seen recipes for savory oatmeal so they might even work together! And here in Austria Haferschleimsuppe is the traditional cure for any kind of malaise, a bit like congee in east-Asia, but I can't say I'm a fan...

Savoury oatmeal is super good - when I was vegan I used to make it with margarine or oil, nutritional yeast, a little bit of black pepper, and soy protein isolate. If the peas had been hot, and I had added marg, yeah why not? Maybe I can try that later. Oatmeal doesn't bloat me up the same way that bread does (but I do love a good rye bread)...
 
I was chatting with a friend and mentioned I have no coffee, she sent me 6 euros so I can get a pack! That was very sweet of her! I also had a protein shake and a tomato as a "dessert" because I still felt a bit hungry. I'll walk the dog soon, and then walk to the grocery store for that delicious coffee.
 
Dinner: tuna and potatoes, a fresh tomato. My knee hurts... I wonder if I should go buy the coffee tomorrow, or if walking might alleviate the pain. Walking the dog wasn't too pleasant because the knee felt so sore :/
 
Whatever you decide to do I hope it feels better tomorrow. Do you have a ice pack you could put on it for a while?

Cold makes my soft tissue pain worse, presumably because the pain isn't due to sudden injury, but the tissue just not being able to take normal amounts of stress. So by reducing the blood flow to the area, the pain gets worse...

I made it to the grocery store and took a longer route back. While walking, I had no issues, but at home when I had sat down to eat some macaroni and peas and got up too quickly, my ankle almost gave way. It's not dangerous, the ligaments have just been under a lot more stress than usual because I've been much more active. I'll take a sedative before bedtime tonight in the hopes that I can avoid another sleepless night and it also relaxes the muscles a bit, which reduces the pain.
 
My knee was hurting yesterday too. I had thought it was well & truly on the mend until I saw the ortho & he poked it about. Hopefully, it will settle down again soon & so will yours. It's always a surprise when we synchronise things in the forum.
I'm glad you continue to make an effort to look after yourself & it's lovely that you have such supportive friends & assistance.

I just had a late night meal (despite having eaten regularly, my portion sizes were very small) of a two-egg cheese omelette and a chickpea pancake with cheese plus a tomato. The amount of oil I used makes me freak out a bit, I originally had enough batter for two small pancakes but the first one got burnt, so. But I clearly needed the food, already feeling drowsy and heading to bed.
 
I slept in! Almost until noon!

Sadly, there are no free appointments at my local health center for mole checks until autumn, I'll have to try later I guess. I made myself a big brunch of a chickpea pancake (this time it turned perfect), an over easy fried egg, and a tuna salad with macaroni, peas, and marinated beans. I'm full and happy.
