What's the egg wash for? Different flavor? Different texture? I can have eggs on core so this is doable for me. And I think I even have some cajun seasoning at home.
The egg wash does two things. You can skip the oil since the egg wash seals in the juices and all. It also gets the seasoning to stick. I just use the egg whites. I guess you could use the yolks, but I don't know if you'd want to.
