You have the tastiest sounding menu! With having to feed 4 people on a budget, healthy foods do get pricey! But I do try, my daughter definitely does not eat junk! I think that the hair-over sounds like a great idea! I love getting that kind of stuff done! It's a great reward. I think the funny hair colors are fun. I used to work in a hair salon as a manicurist and try to get into hair as well. Anyways I had hot pink hair. A lot of the little kids loved it. Sounds like you are doing great though. Just remember out your hectic life, take some time to take care of yourself!
 
Meshellibel, buying healthy food for just myself is expensive, so I cannot imagine buying for a family of four! You're doing a great thing though, teaching your daughter healthy eating habits. I was pretty thin as a kid and it wasn't until I was in my early teens when my mom stopped monitoring what I was eating all the time that I put on the weight. Not that I'm blaming her, because she tried many times to help me lose weight, bought me a bike, exercise videos, and plenty of healthy food, but I made my own bad choices. I really wish I had just listened to my mother!!! Now that I'm in my 20s and I don't live at home I can admit that.

Anyway, if I can say anything good will come from being an overweight person turned healthy is that I know I will have the advantage of eating the way all people should. We all know people who are naturally thin, but fill their bodies with garbage and never get any exercise, which isn't good no matter what your weight is. I'm so happy with the habits I've developed. I'm happy with how full I get with so much less food. I'm happy with the changes I've made and I feel good. And I'm happy that all of you are with me on this!

Well, a friend of mine from Fort Lauderdale where I'm from drove up and surprised me. She really wanted to go to this Mexican place for dinner. No chips for me, no rice for me!
I had a veggie quesadilla. I'm sure it was high in calories, as it had cheese and refried beans in it as well as sour cream, but I don't feel like I overdid it. I felt like a jerk after writing about how happy I am with the changes I've made. I'm definitely going to the gym now, even though I feel like passing out and going to sleep.

Dinner:
Veggie quesadilla which had a tortilla, cheese, beans, bell peppers, onions, and mushrooms, with 2 tbsp sour cream (600?)

I've read your entire diary and I envy your eating habits. If I ate like you I'd probably be able to shimmy back into my old size 0 jeans again! You eat so consistenly! I envy you. You're a college student too! When do you have time to cook and grocery shop?
 
Haha, aw thanks Matty, that's such a huge compliment you don't even know! I can be very self disciplined if I want something, which is how I stick to my diet. The first few weeks were hard, but now I'm used to it and I enjoy it.

The reason I'm so overweight is because I just didn't care for so long-not to say it didn't bother me when I was clothes shopping and not to say I didn't get upset about it a lot, but when I was eating I just didn't care and I made a lot of mistakes-most notably I skipped breakfast most days, I drank A LOT of regular soda, I would have fried foods several times and week and I had no concept of portion control. I also ate a lot of sweets. I know exactly how I got heavy and luckily now I know exactly how I can lose the weight. I lied to myself for a long time, since I've been a vegetarian for so long I always tried to tell myself that just because I ate more fruits and vegetables than people my age I was a healthy eater, but I really wasn't.

Last summer I dieted for 2 months and I did lose about 20 pounds but I was miserable because I was eating the same thing every day and I wasn't eating enough at all. I was having around 700 calories per day. And obviously I quit and I gained back 40 pounds!!!! So this time around I really wanted to be successful. I was just ready to lose the weight and when I found this diary it convinced me. I am a full time college student and I work in an office 30 hours a week On the days you see me cooking I'm either off from work that day or I had gotten off of work by 5:30. I don't usually cook if I get home too late. I shop whenever I get the chance, in between work and school, after work or school, whenever. I'm about to be bumped up to full time at my job and I'm a little concerned about that because I'll have much less time to cook, shop, and go to the gym, but I eat much better on days I go to work because I have have snacks and I can eat food at my desk. I'm very lucky to have a sit down job. I know you said you work in a restaurant, where I'm sure it's impossible for you to just sit around and snack on fruits and sip water. In the beginning of my weight loss diary I did do a lot more cooking and preparing foods, but it was expensive and it was taking up too much time and I had stuff going bad, so I gave in and became a sucker for convience products as well-the Lean Cuisines and the Slim Fast shakes are a big help on days when I just don't have time to make my own food. Combine those with a couple of pieces of fruit that you can just grab, like apples, oranges, peaches, ect. and a single serve yogurt, maybe a Special K bar or a fat free pudding and you've got yourself a healthy low cal day of eating. I think the best thing to do is keep some variety and don't beat yourself up if you do make a mistake. And don't skimp on fruits and veggies. If I have a Lean Cuisine pizza for dinner I'll add a salad to eat with it, and simple vegetables like lettuce, baby carrots, and cherry tomatoes taste great with a little bit of olive oil, red wine vinegar and a lot of spices. I'm not saying I don't get tired sometimes and wish I could just go out to lunch with the girls at work or stop at Wendys on my way home instead of thinking up a way to make a balanced dinner with protein, starch, and vegetables but I want to lose weight and be healthy and I want to show people that a vegetarian diet done properly is probably the healthiest diet of them all, not just for weight loss, but for overall health.

I've also incorporated strenuous exercise which is moving things along for me. And it's the same deal-I just have to force myself to go sometimes after class and after work, even though all I want to do is go home and lay on the couch and watch tv with a bag of chips. My school has a really great gym, so I'm also lucky in that aspect. I talk to anyone who wants to talk about diet and fitness to get tips, I check out the group exercise classes once in awhile, and sometimes I go with one of my coworkers. I try to mix it up. I just know that right now I have the resources to lose weight and I have to use them. I don't want to graduate from college and have a full time demanding job, ways more bills to pay, and then be expected to lose weight. Now is the best time for me. I'm young, I'm single, I don't have a family to cook for and worry about. I have access to a free gym and I have a job that I can be flexible with. The time is now!

And I'm incredibly sorry that was so long. I am an English major after all. I tend to overwrite things sometimes. Let me know if you need help with anything in your diet and if you have any good tips or recipes for me I'd love to hear them!

Amen, Sister! Healthy eating is expensive and full of effort. Most of us know why we are overweight and how to fix the problem. The crux is whether or not we will DO it.

Thanks Totallyscrappy! It is so true, it's all a matter of being ready and willing to put forth the effort and make the sacrifices, which in the end are not sacrifices at all, but improvements.

So I'm heading to the gym. I had a little lunch to give myself energy for the workout.

Lunch:
1/2 Veggie Turkey Sandwich with 1 slice honey wheat breadand 3 slices Good Deli Veggie Turkey (135)
1/2 cup baby carrots (45)
Light Fat Free Yoplait Peach Yogurt (100)
 
I went to the gym and did 30 minutes on the gazelle, then I went and did free weights, hip abduction, crunches, ect, and then I did another 20 minutes on the gazelle. It was a sweaty workout.

Dinner:
Eggplant, mushroom, and tomato wrap, using baked eggplant slices, baked mushrooms, sliced tomato, a bit of shredded mozzerella. I used a low fat low carb wheat wrap. I have no idea what the calorie count was, so I'll guess around 400.
Salad with carrots, tomato, cucumber, and oil and vinegar (100)
Cup of Pineapple (100)

Snack:
Healthy Pop Caramel Apple Popcorn (100!) How cool is that?

Dessert:
2 tbsp frozen Cool Whip in between two graham crackers. (150)
 
Breakfast:

I work until 10 tonight, so I have to bring a lunch and a Slim Fast. The bad thing about working at night is that it kind of throws off my eating schedule, but it's not too bad. I like working at night because I can sleep in in the morning and the boss leaves around 5:30, so then no one has to work as hard. :)
 
I almost forgot! Yesterday at Costco I sampled a bite of a veggie burger that's exclusive to the store (and it was really good and I wanted to buy some, but they were sold out.) Anyway, the box said 1 burger was 110 calories, and I had a little bite, so I'll guess that was 15. And then I had a sip of this pomegrante juice that supposed to help people with heart problems. It was probably 1/2 tablespoon, so I'll guess another 15 cals. Insignificant, but I wanted to write it down anyway, because that's the whole point of the diary.
 
Sounds like you are doing good. Late nights aren't as bad for me, it's the weekends. That really stinks about the veggies burgers being sold out. I love veggie burgers, they have so much more flavor than a regular burger!Thank you for the note of encouragement in my diary!
 
Thanks Meshellibel. It does suck that the veggie burgers were sold out because they were really really good! Next time I go I hope they have them.

After reading Meshellibel's diary I decided I need to buy an exercise ball and some weights to play with while I watch tv. I have to find a good price.

1/2 cup baby carrots with homemade hummus (pureed chickpeas and garlic) No idea what the calories were, so I'll guess 150

Ooh, not having dinner was a bad idea. I'm so hungry. I didn't do anything bad, but I hope I never forget my dinner again. Now that I'm used to eating three meals a day plus snacks messing up my routine feels crappy. Time to fill me up with healthy low cal snacks!

Today a girl at work commented on how I was looking slimmer. :) Of course I was wearing pinstriped black pants with a black top and 3 inch heels, which would make anyone look slimmer, but still, it felt nice.
