My Diary

OMG..lol wendy. Think you've got a long time to go until the kids go to college.

I had a "vegetarian" lunch today. Plate of spaghetti, cottage cheese for sauce, 4oz chicken with broccoli and cauliflower on top. Of course the chicken was baked and the vegetables were steamed. It was mmm good. Have lots of spaghetti leftover, so we'll see what else I can come up with.

Wish I got time to take classes like you stingo. Yoga, Tai Chi, Spinning. So cool. Oh, does Tai Chi makes you sweat?

Well it's one advantage of being single without a family - my only responsibility is to me. As for Tai Chi, it depends on the routine and the approach. I tend to emphasize the martial art aspect of it, so given the right routine it does cause you to break a sweat.

I just think it's cute how u are so excited about it and anxious to share it with everyone. :p

That's because if I make something and it turns out well I'm surprised enough and happy enough to share lol. Especially the shrimp it sounds so impressive but it's very easy to make - such things delight me. (Not to mention the fact that it's a good conversation starter with women :)).

New Wok Merits a Stir Fry

I'd ordered a Cuisinart Electric Wok from amazon last week, and it came in yesterday... Stir fry was definitely in season, so I picked Pineapple Chicken Lo Mein as the inaugural recipe as I like pineapples and this is an item not many chinese restaurants would have. The wok itself performed beautifully - it reached the desired 375 degrees quickly and was ready and able to fry up the chicken, carrots, green beans and other goodies put into it. The recipe, however, has a minor oversight, in that it doesn't say when to add the pineapple chunks... I put them after taking the rest out of the wok, but next time I make it I'll add them with the chicken and see what comes out. (Note to Kiria, I used the ABC Salty Soy Sauce, and the resulting sauce tasted a bit salty, but having reheated it with the pineapple chunks it seems a lot more balanced.) The resulting lo mein was tasty though - not sure if it was the Barilla Plus pasta or the sauce, but it did taste lighter than lo meins I've had in chinese restaurants. I'm definitely going to make this dish again, as I think some experimentation will yield even tastier results. And as for the wok, it cleaned out very nicely - nothing stuck and I was able to just pretty much wipe it out.

MMMM..sounds good. Will you share?

Don't I always?
