Yuki, the blood tests tell them (a) whether you are on track with the diet - they can see if there's a "deviation" from the expected results by the levels of your various hormones and so on, (b) whether your medical condition is coping well with the diet. If there were any significant problems, then they WOULD vary the diet, but I have heard of this happening only in rare cases. Eg if someone's cholesterol were still too high, they might have to knock off the egg allowance etc. But the vast majority of people go well on the diet they were given originally, and stay on that all the way through. If there's any reason to vary it, it will be a GOOD reason.
They have many years of collecting this kind of info from all their customers, so they know the desirable outcomes they are looking for in the blood tests. For those who don't vary the diet and stick to it 100%, this is very consistent in the vast majority of cases.
But - don't despair. Just keep experimenting. If you can only get apples or whatever in Alice, get good at varying how you do the apples. I eat them mostly raw, but occasionally cooked or stewed is a very pleasant change. You can use plain crackers as "crumb" topping too if you want a change of dessert. Zucchinis can be grated into an egg fritter, fried in a pan, baked, whatever you want. Same with most veg. Marinade them in a little balsamic vinegar, salt and a bit of spice, and bake.
Mostly I just stir-fry for lack of time - but if you have time, have fun and get creative!
