I passed on the carrot cake. Office temptation, but I would rather enjoy the splurge calories Thursday. I just thought it was funny that I was trying to justify it for a moment there! :)

That's up there with the zuccini bread amounting to 1/2 cup veggies. Maybe you could've worked in a tablespoon of carrots! LOL Good for you for turning it down, that's gotta be my favorite so I know how tempting it can be.

if I put 5 cups of zucchini into a 20-slice loaf

Just out of curiosity (in my book, the only good zucchini is one someone else is eating!), I checked out a zucchini bread recipe. 24 servings, 231 calories per, from 2 cups of zucchini. So a slice gives you 1.33 Tablespoons; it takes 6 slices and nearly 1,400 calories to get 1/2 C of veggies.

A piece of carrot cake (1/28th of a recipe) = 298 calories and only 2.25 Tablespoons of carrot. 3.5 pieces and more than 1,000 calories to get 1/2 C of veggies.

Three Tablespoons of pumpkin in 1/8 of a pie, for only 283 calories. 755 calories (2 2/3 slices) for half a cup of veggies.

Sweet Potato Casserole = 571 calories to get a 1/2 cup of veggies, and they don't even count!

Six cups of spinach, steamed down into nothingness, with a teaspoon of butter and some salt = 94 calories.
