Oh I LOVE this bonus challenge! I try to do this at the end of each night to remind me that I am really so lucky.

Five Things I'm Thankful For...

1. That I have a roof over my head & heat within these four walls to keep me dry & warm.

2. Today I have nothing I HAVE to do. I get to chose. I am so grateful for free days now & then to remind me that I can do what I want & a chance to check in with myself to see what that is.

3. The INTERNET! I can't imagine all the stuff I would never know without it & its great to be able to track calories & stuff on.

4. My family, friends & the man in my life. Love is an amazing thing, in ALL its forms.

5. For the wonderful people who are so inspiring & motivating on here. The support is amazing & certainly a blessing.

Iceberg lettuce has pretty much no nutritional value, and potatoes are just too starchy. I want people who don't normally eat a wide variety of veggies to spend a week eating them
 
Here's an easy way to get in your 3 cups veggies a day...

I know fresh veggies are the preferred, but I don't always have time to prepare them and they often spoil before I have a chance to eat them.

Look in the frozen food section for the new line of Birdseye steamfresh veggies in the pouch. Each of the full size pouches contains roughly 3 cups. They're really good and foolproof! Pop the entire bag in the microwave and in 3 to 5 mins you have fresh steam veggies.

My fav so far is the brocolli and cauliflower. I eat 1/2 the pouch with a little butter and lemon pepper for lunch, and 1/2 the pouch with a sprinkle of low fat mixed shredded cheese for dinner...yum!

I just tried the Green Giant Healthy Weight steam veggies. Comes frozen & you pop the bag in the micro. Was really good. Carrots, black beans, edamame & sugar snap peas. Sodium could be better, 240 mg for a 1 cup serving, but I have seen a lot worse. I did have some fresh sliced pineapple & blueberries along with it. (& some salmon, but thats not part of the challenge!)

Yeah, I am a bit behind. Comcast cut the cable to my place (and the apartment above and below me) and just fixed it. I am not sure how the guy above me convinced them to come out today. When I called at 9:15AM today (it went out between 7:30PM and 1:00AM last night), the soonest I could get was tomorrow in the middle of the day. Of course I am at work then, so I had to take the Tuesday appointment. Now I do not need it!

I am off topic.

Here is my list:
1. My job (where they let me shine)
2. My parents (who made me who I am today)
3. My cat (who always make me smile)
4. My health (which I really started to watch lately)
5. This forum (to keep me going)

I am going to update the other thread, too. I had a rough week (lots of food) but still lost. This week will be extra tough as I am going home to spend time with my parents for the holiday. I must have willpower around food!

Wow, that's a lot of sodium for a 1 cup serving. Does it include some sauce or butter in the package?

yeah it has a butter sauce. tasted good, just have to make sure it works with whatever else you are eating to stay within your daily limits. Never thought to mixed carrots with black beans, but I love the combo.

 
Here are 5 of the many things that I am thankful for every day of my life.

1. My loving boyfriend Dan who has done so much for me, and is always willing to do more than he has to. He's the one I want to be with forever.

2. My family. (Mom, Dad, Sister, Brother, Step-father, Step-mother, grandparents, etc)Because they have made me who I am today, and have helped me so much.

3. My health. I am so lucky that I don't have anything seriously wrong with my health. Being overweight is the only thing. I could have so much more wrong with me, and i don't.

4. Waking up every morning. I am thankful to live every day because I could die in my sleep, or in a car accident in the drop of a hat. But I was given another day to live, more time to learn, to love, and to make each day better then the day before.

5. Going to college. I am thankful for attending a fair priced college where I can take a step towards accomplishing my goals. I love exploring the world of culinary arts, and going to college makes me so happy.
 
My Five

Right now I am thankful for:

1. Midol
2. Hot Chocolate
3. Half of a big ass Banana Nut Muffin
4. Zicam
5. I leave for Disney Tomorrow (First Class Woohoo! :hurray: )

Things I am thankful for on a daily basis:

1. My family. As crazy as they all are and even though my sister and I have our conflicts I'm glad I have her.

2. Rob. We've had our ups and downs and have both made mistakes, but life is full of lessons learned and we're both stronger people for having learned them. Stonger as individulas makes us stronger as a couple.

3. That I own my own home. In this current market I'm glad I'm already in.

4. Alice and Molly. They are a source of unconditional love and affection and I don't care if people say they're just cats. They are my babies!

5. That I'm strong enough to forgive, cautious enough not to forget but smart enough to not use the past as a weapon.
 
....I'm guessing carrot cake doesn't count for our daily vegs, huh?....

just kidding. I know it doesn't in my book.
 
IMHO, veggies are veggies. So if I put 10 cups of veggies into a soup that makes 20 cups, a cup of soup = half a cup of veggies. Likewise, if I put 5 cups of zucchini into a 20-slice loaf, I'd count a slice as 1/4 cup.

OTOH, if I bought it and had no clue if there were 10 cups or 1, I'd not count it at all.
 
Day 3 Veggies

My veggies:

- pickled gherkin (I don't count it)

I am struggling these days. I have horrible cravings for food. I virtually want to eat everything. :ack2:

Yup, I agree with this. If you know what's in it, then you can count it. But otherwise, you have go get your veggies some other way. Also, pumpkin pie and zucchini bread isn't something you'd want to be eating lots of anyway due to the high calorie/sugar content..lol. But this week, who gives a shit...lol. At least I don't...:D
 
I passed on the carrot cake. Office temptation, but I would rather enjoy the splurge calories Thursday. I just thought it was funny that I was trying to justify it for a moment there! :)
