It was really good. I was completely supprised. I am very finiky about my food so when I tried it it really shocked me how good it was.

You picky? I can't imagine :)

Does it taste close to spaghetti? Or do you know it is definately a veggie?

How do you make it?

Doesn't taste like spaghetti - just looks like it. But if you pour enough sauce on it (alfredo is the key) then nobody really cares whether its a vegetable or spaghetti! :p

I love the stuff. Got some growing in the garden now. I like it with just a dab of butter and salt. Yum yum.

How do you make it?

The easiest way is just to cut it in half and lay the halves down on a baking sheet. Cook that in an oven at 350F for 45 minutes to an hour (depending on the size of your squash). When it's cool enough to handle, you can just scrape out the flesh with a fork and it comes out like spaghetti! Then it's up to you to figure out what to do with it.

I'm home alone tonight, no kids and wife is away. She's coming back tomorrow and we'll probably have a nice steak dinner or something. My problem is that tonight I want to make something tasty for myself, but still healthy. I just don't have any ideas. I'm a good cook so anything goes.

Suggestions?

All recipes I have is for four or more people, but I guess you could reduce the size or freeze the leftovers (depending on what you make.) I have some great new great recipes I've been making and so far it's all been a big hit with my family. I can give you one of them if you're interested.

Um, doesn't alfredo kind of negate the healthy (and low fat/cal) value of the meal?

Great, thanks! I've always wanted to try it but I've been a big ol chicken. :D

Yup. I wasn't offering a healthy version - just a way to make it where nobody (and I mean picky non-vegetable liking people) can tell that it's a veggie! :p

But seriously, just a dab of butter and salt and it's really good.

I like veggies so that would probably work for me. I made a meal that used FF mozzerella cheese and RF Ricotta cheese mixed and melted together. I bet you could probably put that on there and it taste good. Lol, now that I think about it, I might try that. :D

Hmmm, tasty thread. Question:

Have any of you tried quinoa? It's not readily available in South Africa, but I'm going to get some from a health shop. Any yummy ideas for recipes with quinoa?

Thanks, guys. Spaghetti squash is great. You don't have to put any sauce on it. It's great as is. The kids loved it

I've decided to go with something that I've never had before, so I'll let you know how it turns out.

I'm making a marinated kangaroo burger on a bed of quinoa with roasted asparagus on the side.

(hope no one is offended)

I am VERY offended, damn it! Roasted asparagus. Whoever heard of such?!?

:p

Just a drive by to keep from getting so far behind! I love quinoa, AnkleB –I use it in place of rice in a lot of recipes. It tastes great in stuffed peppers, and made my basic chicken and rice recipe a lot healthier.

Trops, you can throw a couple of skinless chicken breasts in a baking pan, add a cup of quinoa (spread around the chicken breasts), 2 cups of water (or 2 cup water and 1 cup chicken broth) and bake for 30 – 45 minutes. Easy and yummy!

Ummm so what does kangaroo taste like?!?!?!?!??!?!?!?!?!
I'm very curious. I'm assuming its red meat.

It is red meat. I haven't cooked it yet. I set it to marinate in some wine and salt and pepper, then I went to the gym. I kicked my own ass so hard that I had trouble walking out. Now I'm home and I don't feel like moving just yet. I figure that I'll just sit here checking the site till I feel like cooking. I did put the quinoa on, so I'll have to do something here soon.

I also got some fresh dill to make a yogurt dill sauce. I usually put a lot of garlic in my yogurt dill sauce, but with my wife getting back tomorrow I don't dare.

I was looking up the nutritional stats for kangaroo, and I have to do some converting, but 100 g of meat has 22 g of protein and 1 g of fat. I have to figure out how much it is for a 4 oz patty. The guy at the meat store told me not to cook it too much because it's so low fat. I'll let you know.

woww that sounds awesome!! I became a veggie because of all the saturated fat in meats but I think I might try that.. low in fat and organic!!

You don't need to become a vegetarian to lose weight. Just keep an eye on the sat fats. You really want a small amount to keep the weight loss in high gear. To little and the body starts to horde.

Besides, we carnivores love to eat the herbivores. They taste the best. :drool5:
