Steph's Journey

Cauliflower crust margherita pizza sounds low cal to me, guess it depends on how much you eat!

I think just the fact that you are thinking about so clearly will lead you to good choices. Keep it up, and let us know where it ended.
330 calories for half the pizza! Thats a serving!
I feel like im cheating though. I keep thinking about this article i read about a guy who ate nothing but twinkies or something and still lost weight because of the calorie deficit. I dont want to fall back into old habits this soon...or at all for that matter.

Yep..ive committed to it. I told myself at the beginning of this, that i wasnt going to eat boiled chicken and salads for every meal. Im going to make smart choices and keep this fun.
Thats a smart choice to hit the spot for pizza.

I'm going to make a cauliflower pizza base after my next shop. LaMa has me craving rollmops, now you have me wanting a cauliflower pizza base :svengo: At least it's not chocolate :)
I can't eat bland food either. Life & food is to be savoured & enjoyed.

How does the cauliflower pizza taste?
Well I've never had a cauliflower margherita pizza.. I've had other kinds and they arent half bad. Im finding that im enjoying a lot of foods i never thought I'd like. Recently I've been trying a lot of vegan options..just for fun.
I actually cant pick up the order till tomorrow..i guess they were busier than usual...so we will see!

I quite like cauliflower plain but whenever I watch someone make a cauliflower pizza dough the amount of eggs and cheese makes me feels a little sick so I've never tried it and am curious to hear your judgment about the base itself.

So this morning is a bit rough. We had a wild thunderstorm roll in last night. It caused the temps to go from near 80F yesterday to 45F this morning.
My one foot is feeling every bit of that barometric shift.
I took my multivitamin this morning with a Tylenol chaser...i wish it actually did something.
I have been brainstorming some batch recipes this morning.
I saw a recipe that called for adding veggies to oatmeal and baking them off in muffin tins to make little cups, and putting scrambled egg in the middle. Savory oatmeal...its intriguing.

I was going to walk in the cooler temps today but i think the lower impact of the bike might be better.

Just gotta get through 3 and a half more hours.

I´ve been looking at savory oatmeal as well - although so far the only version I´ve tried is adding it to soup (Haferschleimsuppe) when I wasn´t feeling well. If you find a combination you enjoy, please share! Hope your foot feels better soon.

I just got side-tracked looking up savoury oatmeal recipes. I buy sourdough oat bread & I might see if I can find an oat muffin recipe.....
Hope you wake aching less & have a nice Sunday :)

So the margherita pizza...it was really good! I put some chicken on it for the extra protein.

The unfortunate thing about it was it was a bit overwhelmed with basil..im not a huge fan of basil.

I had half with a big ole salad. It was very filling and even though the crust wasnt bread you really cant tell. It satiated the pizza craving for now.

The foot is still rather painful so im gonna take it easy today. If im feeling better tomorrow im going to walk the trails at one of the parks and enjoy the fall foilage.

If a relatively simple pizza like that still doesn't overwhelm the crust it must be pretty good indeed. Was it just cauli and eggs or cheese and spices as well? Maybe I'll try it some time after all; have a lot of protein in the crust would solve my topping problem.

It was actually cauliflower, rice flour and some binders.. Xanthan gum i think.
I might try my hand at making a home made crust one of these days.

So, ladies and gents it is Sunday. Weigh in day.
Drumroll please....

334.8 lbs

I feel good about that number considering i took 2 rest days and the arrival of my "monthly visitor" late yesterday.

I feel like i got hit by a bus this morning, but once i functionally wake up and after i go run an errand, ill see how i feel about getting some activity in. Day one of my visitor is usually the worst...and i still need to do meal prep.

Ive been thinking more about daily weight tracking. I dont know if i will do it this week..but its something i am considering. Maybe try it for a week and see how bad it stresses me out. Haha

Well done Steph! Auntie Flo is a right ole b*tch so you must´ve done really well this week.

Let´s see: what does cheese mean for you? Salt and fat? How about air-popped popcorn tossed with a grating of parmigiano?

Good for you!! Well earned.

Funny how that works, the truth is any diet will work so long as you burn more calories than you eat. Some are certainly healthier than others, but calories are what counts.

One thing I have learned in the year and a half I have been doing this is to eat filling low calorie foods. It lets me eat a lot, get full, and still control the calories. Cauliflower is one great way to do that, I've been eating a lot of riced cauliflower lately. LaMa pointed out a while back a comparison between apricots and chocolate bars. An apricot has about 34 calories, a Snickers bar (1.6 oz or 45 grams) has 215, so you can eat 6 apricots and get fewer calories than a single small candy bar. The apricots are of course much better for you, and more filling.

You don't have to fall back on your old habits, just keep working on things and posting here, it will really help. Certainly helps me.

Gooey melty cheese. Its more a texture and flavor thing. I love macaroni and cheese, broccoli cheese soup, anything where cheese is the star. I think thats been a revelation for me, realizing how much a serving of cheese is, but i have adapted and still incorporate it responsibly when i want to. I havent had mac and cheese since i started this. I dont do the boxed stuff and i dont trust myself to make and eat it responsibly. I was looking at a cauliflower option for mac and cheese when i was doing my grocery order but i passed on it for the moment.

I made a really good quesadilla the other day that was under 500 calories and that seemed to hit the spot...perhaps ill make one again for dinner tonight..maybe with some tomato soup.
