Went to the beach today. It was really nice out. The water was a little too cold, so we just sunbathed. Then we went to Outback for dinner. I had:

Dinner:
Salad with iceberg, romaine, tomato, red onion, cucumber (and yes, I had a few of those delicious crutons!) with fork dips of honey mustard.
A cup of sauteed mushrooms
2 slices of brown bread.

Since I didn't get lunch or an afternoon snack I'm pretty confident that my calorie count is still under 1,000 today, so I may have a peice of fruit or something later.
 
sunbathed,..ok now I am green with envy.....wind chill here is so cold you just dont hope that eye lashes dont freeze to your face when you go outside. YOur menu entries always sound so yummy!!! Your doing awesome!
 
Haha, Jennifer, having beach weather year round is definitely a perk of living in Florida...but don't worry, we paid for it this year with our three hurricanes and a crappy disappointing election. In regards to my menu, I'm trying really hard to keep it yummy and interesting so that I don't get bored and give up. I also have to be creative since I don't eat meat. Luckily there are a lot of things you can do to make vegetables and fruits fun!

Oh, almost forgot, I had a cup of strawberries last night a few hours before bed.

Today:

Well, I'm on my way to a work meeting (it's at 8 am!) and I don't have to work until 1, which blows. I'm really not hungry, so I'll eat when I get home from the meeting.
 
Good on you it sounds like you are doing really well and you have a wonderful variety of yummy foods. I think that I can take a leaf out of your book and start incorporating a few different foods into my diet.
 
That's great Rosered. I think a variety of foods is key to not losing interest and natural foods, like fruits and veggies, are the tastiest way to eat healthy. They have natural sugar, but they're packed with vitamins and nutrients. After I had my Mexican fiesta the other day I could feel a difference in my body, from being loaded down with the processed carbs and sodium. Fruits and vegetables just make you feel good! And soy protein is another key. I know it's hard for people who are used to eating meat to get used to the idea of soy products, but they're vitamin fortified and have a lot less fat. Now I know a lot of you guys are in different parts of the world (which I think is the coolest thing about this forum,) and I don't know what kinds of products are availible to you, but if you see anything by Morningstar in your grocery you might want to give it a chance. Morningstar is fabulous and The Good Deli is pretty good. Some other Soy companies aren't so hot (I hate Smart Deli and I'm not crazy about Boca,) but if you sample a few you might find stuff you like. If you ever need any suggestions please let me know!

So after the meeting I went with a few of the girls to get breakfast. Not much to eat for a veg at breakfast places besides pancakes (which I knew were off limits) eggs and toast, so that's what I had:

Breakfast:
Two well done eggs
2 peices whole wheat toast with a slight film of strawberry jam.

I have to plan ahead for lunch and my snacks since I'll be at work today from 1-10!
Blah.

School starts tomorrow!
 
Almost forgot-I had a small glass of orange juice at breakfast too.

And a girl at work just gave me two pieces of sugar free dark chocolate. It was really good, but I looked at the nutrition facts and 5 pieces have 170 calories and 13 grams of fat, 8 saturated. So I better lay off of those. Dark chocolate in small doses is good for your heart, just like red wine, so I figured it was okay to take a few bites, but I have to watch it. It's that time of the month though :mad: and I'm hurting for chocolate. I brought a fat free chocolate pudding for later on, because I figure it at least has calcium and it's kind of filling. :D

Pre lunch snack:
1 very fresh peach.

It was really good, very sweet. I just ate it at my desk and I can still taste it. The blackberries I had yesterday were very sweet too. And as far as I know they're both in the off season, so I was very surprised at how good both were. I bought two oranges the other day and they were really expensive. The orange groves were destroyed in the hurricanes, so prices skyrocketed. The one I've eaten so far was pretty good though.
 
Lunch:
Big salad with spinach, argula, spring mix, carrots, cherry tomatoes, snow peas, cucumber, and a chopped up Parmesan Ranch Chik patty with fork dips of honey mustard.
Diet Rite.

I've also been guzzling water.
 
Just had an early evening snack. I won't get dinner tonight since I work until 10 PM and I won't get home until around 10:30 and then I have to shower and all that jazz. I might eat a piece of fruit or something, but I don't want to go to bed with a stomach full of dinner. Anyway, my nighttime snack:

Snack:
Three big tablespoons full of low fat vanilla yogurt with 6 sliced strawberries and 1/8 cup blueberries. And it was very tasty.

I didn't know that the sugar free dark chocolate was so bad in areas other than sugar! Looks like they took out the sugar and threw in a heart attack! Thanks for alerting me. I'll know not to fall for that...

Yeah Totallyscrappy, if you're going to have any kind of chocolate get a small quality brand, like Godiva or Ghiridelli and really savor it. Don't waste your calories on the sugar free stuff because it's not worth it.

I did end up having apple slices with peanut butter when I got home from work, since I didn't get any dinner. Today was a pretty good day. School starts tomorrow and I'll be on the go, so we'll see how things go.
 
You go girl, and dont let the critics get you down, push them away and run forward. As a guy who has spent his life in the military usually under 10% body fat working out in the gym 3 hrs a day (special ops) I will tell you the healthy life is the greatest. You seem to have an AWESOME personality and let me tell you that will get you far in life. I have never been over weight but in a way I am proud I am experiencing this. It sheds a whole new light on life. My wife recently left me (I think because of my problems, I got shot in Iraq 6 times and gained 200 lbs from kidney problems) but now I know something that you guys already know. People treat you different as an overweight person and thats not really a bad thing. For you know that person like you for who you are. And "Fat" (sorry hate to use that word) people tend to have a GREAT personallty and not get all stuck up over their looks. I wish you well in this process and if you ever need more encouragement ask us for it (hehe I am retired and do nothing now but work out in gym for 3 hrs a day and check this site daily :) ) First thing to learn (from my experience thus far) is it gets better. I dont even want to get off my diet now because the results just make me so happy (@30 lbs in 3 weeks) and the life style is really not that bad I eat 5-7 meals a day and keep under 1500 cal and the funny thing is i am usually making myself eat because the goal is find a bunch of things you like that are low cal (and try to keep ratios of fat/carb/protein good) and if your like me I bought a vaccume machine, ya know the little things that seals food in pouches. I made 250 cal meals and put them in bags and freeze them and boom right in microwave hehe, what can I say I am lazy. But it is easy to make meals that way and you can use them for school too. Well I have yapped enough now good luck to you and remember you can do it dont let yourself tell you otherwise.
 
First day of school. I've only been to one class so far, English Rennaissance Poetry and Prose. My teacher looks like a biker! And he was really funny, it seems like it will be a good class.

Breakfast:
2 eggs worth of egg beaters with a sprinkle of colby jack cheese
2 slices of Veggie bacon
Small glass of Cran-cherry juice

Lunch:
Tomato sandwich made with 2 slices whole wheat bread, sliced tomato, a sprinkle of skim mozzerella and hummus spread, toasted.
1/2 cup low-sodium tomato soup.
Diet Rite.

I have to go to my next class now, Writing Scripts, and then to ASL III, then I have to stop at the libarary and then I'll get to go home and make dinner. I'm bringing an apple to school in case I get really hungry.
 
Thanks for the positive words Justin, you sound pretty cool yourself. I'm sorry about your crappy situation, but it sounds like you have a good handle on things.
 
Wow, what a long day in school. So far all of my classes seem good, but I was on the go all day long. I was super hungry when I finally got home, but then I had to run back to school to the bookstore before it closed, so I munched on a small apple on the way and then when I got home I made some dinner:

Dinner:
I made 3/4 cup of whole wheat pasta and I sauteed a few sundried tomatoes and some spinach with a tiny bit of olive oil and some I Can't Believe It's Not Butter spray, along with some chopped roasted garlic and made a little garlicky, faux buttery sauce for my pasta.
I also made a big salad with tomatoes, cucumber, and carrots and just used a little olive oil and a lot of red wine vinegar for dressing. It was pretty good.

Late night snack:
That chocolate craving is getting me, so I had a fat free chocolate pudding and one vanilla wafer, because they're surprisingly low fat and calories.

And I walked my ass around campus ALL DAY. I must have gone to the bookstore and the library 10 times, and all of my classes are on opposite sides of the school from each other. So at least I got some exercise, even though my ankle is throbbing.
 
Ugh, 8:30 in the morning is too early for work.

Breakfast:
Same as yesterday, 2 eggs worth of Egg Beaters
2 slices Veggie Bacon
Small glass of Cran-Cherry juice
 
Lunch:
Well, I thought I had a brilliant plan. I have no money and I'm running low on food, so I had to make a peanut butter and jelly for lunch, but I didn't want to waste too many calories on sugary jam, so instead of using jam I just sliced strawberries and made a peanut butter and strawberry sandwich on whole wheat. It was kind of weird though. At least I tried.
I also had a peach and a fat free chocolate pudding.
And a Diet Rite.

Mid-afternoon snack:
1 string cheese.
 
Dinner:
I made a BLT wrap with three strips of Veggie Bacon, some raw spinach, and tomato slices on a whole wheat tortilla with a little bit of honey mustard. I'm still kind of hungry, but I have no money until Friday (payday) and I'm out of almost everything.
 
I hear ya about the money and trying to eat healthy. Just today I was at the store buying my "skinny" food and I was amazed at the total bill. But, I'm worth it!
To kick those chocolate cravings I've had the Oreo thin crisps. They are made by Nabisco and they are part of the "100 calorie packs." Now, there is no tasty creme filling, but the chocolate cookie is pretty much "there." Might want to give them a try on payday. :)
