For those interested, my interview with Gary Cantrell dropped today. For those not familiar with his podcast it's a really great listen. He's lost 100+ lbs and he talks his struggles with weight and just every day issues, and he brings on people he's met through IG to discuss the same stuff. This was episode 160 of his podcast, and he's now posting them on youtube as well (which I wasn't aware of until midway through the interview... LOL).

Hey all... been watching my weight bouncing up and down a few pounds the last few weeks, but because I'm still tracking what I eat every day I'm not worried about it. Just one of the reasons why you can't let the scale set your mood! After a few weeks of that weirdness I'm right back at my low weight of 227 and I feel like I'm about to see another little spurt of weight loss. Hope so!

Oh and by the way for those who might enjoy it? Came up with this little fun dessert today. Hard to really call it a "recipe"... it was much more about trying to get it to look right. I've been trying to do that for the last few weeks. This was my third attempt at making it and today I finally worked it out! Only 49 calories so if anyone wants the instructions let me know and I'll post them!!! It's easy!!
I call it my Jello "Watermelon" cup!

Good luck with your upcoming "little spurt of weight loss ", you have been at this sucessfully for a long time now, I trust your predicions.

Sure the watermelon cup looks good, a recipe would be appreciated.
 
Thanks Rob - Yeah my weight loss, at this point, seems to come in little fits and starts... that's how it goes. No complaints, just observation. I won't lose anything for a month or six weeks, and then I'll lose 4-5 lbs in a week. LOL

Anyway, here's the "recipe" such as it is:

Bottom layer is two small boxes of Sugar-Free "red" Jell-o. Either use two of the same red flavor like Strawberry, Cherry, or Raspberry, or if you're adventurous... mix two together (that's what you see above.. a mixture of Strawberry and Raspberry). Make per package direction. 2 cups of boiling (or very hot tap) water, and then 2 cups of cold water. Pour into 8 small jars. It'll be about 1/2 cup each.
After that sets, using a plastic straw or a skewer, gentle poke five semi sweet chocolate morsels down into the set red jello to serve as seeds.
Next, top with a layer of Cool Whip, 2 tbsp per jar. Be sure to form a seal with Cool Whip (letting it touch all the edges of the jar) or it will float away on the next step.
Finally, prepare a single small box of Sugar-Free Lime Jell-o per the package (1 cup hot/1 cup cold) and carefully pour on top of the Cool Whip layers until you fill each jar. Seal and let set. That's it!
49 calories per serving!

Aww, don’t sell yourself short! It’s about 10 minutes of total work... and most of it is mixing hot and cold water.

We eat with our eyes, so the little bit of effort makes 49 calories feel like a lot more, at least that’s how I feel about it.
Or maybe I just like making food look like other food. I’ve always thought that was cool! LOL
 
My "Spidey sense" was correct... dropped from 227 to 226 this morning... actually 226.2 so ALMOST 225. That would be the magical 175 mark. My guess is that will come either tomorrow or Monday. Although I might let tomorrow be the day I take off from my morning walk, so if that's the case then the weight loss will almost certainly be the following day.
Monday morning I was up two pounds to 229... so technically it's been a 3-lb weight loss week. Again, and remember, I'm THREE YEARS into this... it's just another example of why you can't let your daily mood be set by the scale. I can be fickle!!!!

That being said? I'll be really happy to see 225... and am looking forward to the first time I see 219 for sure!
