Only 3lbs in 21 days....of course that's the "reccomended" 500 calorie deficit a day if you do the math...but..I really expected for someone who started at 255lbs to be able to lose more than 3 or 4lbs a month..:-s.

It does seem like a small amount, but you don't realize how significant such a small amount really is. Step back and put it into perspective: Pick up a sack of sugar or a small bag of potatoes and carry it around with you for a little while. Not too long and you will feel that extra weight weighing you down. That's the amount of weight you are no longer carrying around every day. Not such a small amount after all.
Don't forget what you have already accomplished. You are nearly at twenty pounds lost - that is the weight of a tire or two large sacks of potatoes. That IS a lot.
