Curried mince
500g low fat mince
1 stock cube (beef)
1 tablespoon of curry powder
3 tablespoons of sugar (I use sugar because I can’t stand the taste or texture of cooked fruit)
Salt and pepper to taste
1 small piece of pumkin
1 small turnip
1 small onion
1 small parsnip
1 small carrot
4 potatoes cut into chunks
And any other vegetable you like or don’t like lol
Cut up the veggies you don’t like really small and fine these will dissolve into the curry and you wont taste them except for peas don’t put the peas in it lol.
You can add more of the veggies you do like and less of the ones you don’t like.
Put mince in a pot and cover with water, boil till mince is brown. Skim any fat residue from the top of pot (there shouldn’t be much if the mince is good.)
Add all the veggies except for the potatoes boil for a further 20 min, I no this sounds like a long time to cook it but it helps get rid of all those veggies.
Add the potatoes and the rest of the ingredients and cook till potatoes are soft but not mushy. Mix about 2 tablespoons of cornflower with water to get a smooth paste and add to thicken it up cook for a further 5 min. You can eat this by its self or you can have it on toast …so yummy on toast for breakfast. You can also freeze this so you have some ready made dinners. I hope you like it.
You can also make curried chicken noodle soup from this same recipe but just add chicken and noodles instead of potatoes and mince and don’t thicken it. Or have rice instead of noodles just cook the rice separately.
This is not a ww recipe it is something I used to have before ww and have just changed to lean meat instead of fatty meat.
