Weight-Loss COTTAGE CHEESE - what i've been missing!!

if you're going to be using cottage cheese in recipes (ie. baked macaroni), do you recommend straining it first? my instinct is that it would make the dish a little runny.
 
No I don't strain it first. Macaroni absorbs moisture so it soaks up any excess the cottage cheese might have added.I will have to look up the recipe and post it in the recipe section but it won't be until tomorrow.
 
Just please if you're cooking with cottage cheese, don't ever use it in lasagna - it's ricotta cheese only in lasagna - cottage cheese is just wrong and I woul dhave to hunt you down and well - it wouldn't be pretty :)

Ricotta is a nice substitute for cottage cheese, it's smoother and creamier and has a better melting texture...

Hunt away Mal because I always use it in lasagna!!:eek: It melts nice and gooey and makes it really yummy!!!My lasagna is the bomb!! My kids will tell you it is the best!Do you mix your cheeses all together before you make the lasagna?Do you add parmesan and an egg to the mix if you do? Give me your recipe!! I would love to compare!!:)
 
cottage cheese instead of ricotta - oh that's just so wrong.. that would have you put on a wanted posted with a bounty on your head in my old neighborhood in north jersey :D

My lasagna recipe is pretty simple and changes from time to time but it's ricotta that I will mix with a handful or two of fresh grated parmesan or romano cheese (or a mixture of the two) never ever ever the cardboard crap in the green can) with an egg or two.. and lots of fresh ground black pepper with a pinch of nutmeg.

the tomato sauce is a can or two of crushed tomatoes, with many cloves of crushed garlic, a handful or two of fresh basil, and a pinch of cayenne pepper and a shot of olive oil.

I'll then take half the sauce and add a bunch of vegetables to it like a box or two of frozen spinach, some zucchini, and mushrooms or even some meats or sausage. meats can be anything from ground pork, ground veal, ground beef, to italian bacon (I'm totally drawing a blank on the name -but it's bacon that's not smoked and outrageouosly good)

In a baking dish... I put a little bit of the plain sauce - and a layer of noodles - then a layer of cheese, a layer of the vegie/meat sauce a sprinkling of fresh mozarella and some plain sauce and keep layering til you're at the top level - which you finish with the noodles and the plain sauce and the mozarella -

Cover and bake for about an hour. and let it sit for a while

then remove the cover and let the cheese on top get a little toasty..

it's actually better the next day - when everythig has time to set up.


it's also really good as a baked ziti - mix all ingredients together with a pound or two of cooked ziti and drop into a baking dish -and cook for an hour - then remove the cover and let the cheese brown a little bit..
 
Wow so I started adding a LOT of protein to my diet - boiled chicken with hot sauce and brown rice for lunches and dinner, nuts for a snack and now egg whites with hot sauce and cottage cheese for breakfast!

I definitely have been missing something MAJOR by never trying it before! It's so good especially with some fruit in it!

What is everyones favorite way to eat cottage cheese?
 
question for those who don't like lf/ff cottage cheese

Have you ever mixed the lower fat with regular? Did it taste okay?
 
I don't like the fat free -it tends to have the taste and after taste of wall paper paste - the low fat is fine... but i tend to not eat it straight it's not filling enough... I will mix it with defrosted frozen fruit -or salsa...

If you don't like cottage cheese - don't eat it - a lot of people are put off by the consistency of the curds-and the consistency is there whether it's low fat or full fat... there's also different style curds that you could try with the low fat... but honestly there are other ways to get calories - food should be something you lik not that you feel you have to eat for whever property it's got...
 
I like regular cottage cheese but the low fat and fat free, ICK. But I was thinking about mixing them. I usually eat cottage cheese with fruit too. I eat it just about everyday and I'm thinking the regular may be just a bit more fat than I want for a snack. eh, i dont know.

'Wall paper paste' is a great description. What I like to do is either mix 0.5c with 2 servings of sugar free jello or with a bit of crushed pineapple. Both mixtures make the ffcc edible and seem to make it more filling too, and 2 servings of sf jello only add 20 calories to the 70 calorie count in 0.5c of the brand I buy.
 
I tend to eat the LF kind, usually. I tried the FF once and to me it just tasted so salty, and like shit... I usually mix it with a small can of fruit that has been drained (pineapple or mandarin oranges, usually). I might have to try mixing it with salsa, that sounds intriguing....

I can't really tell the difference between the fat free and low fat cottage cheese available here. To be honest with you, I love cottage cheese, so it doesn't matter. I like to mix blueberries, blackberries or strawberries into it to make it a little more interesting, so that could be why I'm not noticing a difference.

So I have never been a cottage cheese fan, but it seems like a fairly good snack. So what are everybody's favorite snacks that have cottage cheese as a base?

I honestly haven't eaten it since I was or something, so no idea if I still hate it.

(A lot of people same tomato, but I HATE tomato.)
 
you'll find a bunch of ideas above...

And I've said it above it bears repeating.. .

you have a certain amount of calories in your calorie bank.. Spend them on foods you really enjoy - if you don't like cottage cheese - don't eat it -there are plenty of other sources of protein avaialable..

there are also different types of cottage cheese that you might have to experiment with the textures and flavors of - some are a dryer curd (like breakstone) some are a really runny curd (like light and lively) some are creamier some are curdier... there are also sodium free that I don't like at all but some do (cottage cheese is fairly high in sodium)

I like it on Wasa crackers (whole grain really hearty crackers) with sliced radishes and cucumbers.

Or for breakfast with chopped up fruit... canned pineapple if fresh fruits aren't availble
 
Oh man, I LOVE cottage cheese! I buy the big containers of the Darigold brand non-fat kind and have some for breakfast with some fruit or if I have it with my lunch I'll put some pepper and fresh chopped dill in it.

I used to hate cottage cheese, but after about a month of force feeding it to myself, I've grown quite fond of it.
