It's a diet without meat so it's Vegetables, Fruits, Nuts, Grains, and I will keep eating eggs (eggwhites) and dairy products.
I love natural peanut butter - which is still higher in fat but lower in sat. fat. But I don't want to get my main protein from there - it's a pretty high fat diet that way. I eat egg whites a few mornings a week but can't handle them everyday. I like cheese but try to stick with lowfat mozzerella, and of course I drink milk regularly - especially in my skinny lattes (skim milk steamed, with espresso - no sugar, flavors or any of that syrupy junk!
) and a ton of water!!!
I've been eating yogurt and cottage cheese, granola (higher in fat), or multi-grain cheerios with a banana, for breakfast. Lunch and snacks have been more or less salad/veggies, apple with peanut butter, or something along those lines. By the time dinner comes around, I'm up for soup or something a bit more 'hearty'. Then I'll have something that will 'stick to my ribs' to hold me over. last night it was broccoli and some mashed potatoes (no gravy) or butter.
We are gearing up for a 4day pack trip next week. My guy blew his knee three weeks ago hiking Uncompagreh (spelling?) and it's still up in the air as to how far we'll be going. But we have two 13-er's planned in the San Juans. I'll be taking my cliff bars and some fruit. Other than that I'll be looking for dehydrated vegetarian meals...
This weekend will be interesting at the Renaissance Festival. They have some amazing food. Then there's my friends 40th birthday party... I haven't felt like I'm 'giving up' anything so far. I think this will be a pretty healthy change for me.
I'm not going vegetarian for any belief system or conviction about meat products (except the belief that eating hormone fattened animals leads to hormone fattened people), just to get a bit of control over my body and to help my physical performance in the activities I enjoy!
If I can get my diet to an affordable vegetarian level (eating healthy is EXPENSIVE), then I can afford some free-range chicken and beef. For now it's about getting myself under control!!!
