If I was a waiter and 90% of the time, people in purple shirts didn't tip, eventually, I wouldn't like waiting on people in purple shirts because I could very reasonably conclude that my hard work would not be rewarded. True profiling is assuming something untrue about a person based on perceived beliefs (black man in a nice car must have stolen it). Coming to a reasonable conclusion based on fact, probability, and experience is not profiling.
(p.s. I have no idea what the tipping practices of anybody tends to be, just using the example)
