I know they say you need vegetables in a healthy diet, but I just can't eat them ... except in soup. Is this strange or what? As long as they're are cooked to death in soup I can get them down. Is it OK to eat say.. Campbell's Healthy Request Vegetable Beef soup or some other variety that has veggies in it? Can that count as a serving or two?

You don't like any vegetables? At all?

What type of foods do you like?

Do you not like them, or is it more you don't like them as much as other foods?

it sounds more immature than strange to me...

How old are you and when was the last time you tried a "vegetable" there have to be some that you like... Or prepared a different way...

I don't find it strange or juvenile...I'm in the same boat. I've tried to choke down just about every fruit and veggie imaginable and I just don't like them. If soup's all you can do, then so be it! It's better than nothing!

I would advise trying new recipes with veggies! It's all about the way you cook them. I really love to oven roast brussle sprouts with a little bit of olive oil and salt and pepper. They get this delicious sweet flavor.
Also, adding garlic to anything makes it ten times better in my opinion!!
Or, maybe try some new veggies or ones that you haven't eaten in years. Perhaps your tastes have changed!
Oooh, and try asparagus! I don't think it's possible not to love asparagus!

I agree with Jane.. its all about how you prepare and cook them..have you ever tried to sautee them in olive oil?? Or put a little low-fat cheese on them? My favorite salad recipe is to mix spinach leaves with sliced strawberrys, cubed feta cheese, almonds, and a vinegrate dressing...

I prefer raw or steamed veggies myself. They taste much better than any other method of preparing them, and no added calories, either.

I agree... I LOVE my veggies raw! best snack in the world being raw veggies and fat free sour cream dip mmm...

I love my veggies raw as well, I actually don't like cooked veggies as much. Only two vegetables I don't like, green and red peppers, I'll eat them though :p.

Well good for you for asking for advice, you obviously want to give this a go.

Sometimes people have not experienced the life of veges, sometimes their parents did not encourage or present them in a creative way. So I guess that is why you are here asking questions so you can give it all a go.

Start by gradually adding them to your meals. You don't have to eat them separately, include them as a small ingredient and over time add more and more. Grate them into dishes, chop them finely.

If you are going to have them in soup, I would be making the soup myself. Soup out of a can, well I think fresher would be better.

I agree that raw veges are the best, I eat the majority of mine like this. Anything in it's most natural state is going to be healthier. It's how we are meant to eat. And I can most definitely say you can see a difference in many areas of your health and beauty from eating/living on a raw vege diet.

The following list are veggies I love. A star means I understand other people not liking said veggies. No star? That means you must love them or be considered an outcast and wear a square hat as to be identifiable in public and avoided.
Some codes in parethesis. R = I like best Raw, S for steamed. G for grilled. Fruits all raw unless otherwise specified.

Oranges
Bananas
Cantaloupe - or any melon
Radishes* (r)
Cucumbers (r)
Pickles (r --- are pickles had any otherway?) Do pickles count? Im counting them.
Broccoli (r) BEST VEGETABLE IN THE WORLD raw
Cauliflower* (r)
Green Beans (s)
Apples
Tomatoes
Onions - needs to be with something, but I LOVE onions in sandwiches, hoagies, soups, anyhting you can put them in
grapes
blueberries
strawberries -- seriously, how could anyone not like strawberries. Terrorists. Thats who.

some easy side recipes

steam some broccoli and cauliflower add a bit of salt and pepper and 1 tbsp of unsalted butter. (1 serving of each, serves 2)

cup of diced onions, slice one cucumber, cut 2 tomatoes into wedges cover with balsamic vinegar - delicious serves uh.. a few. play with the amounts. i make extra cause i go overboard

steam some green beans, seriously good and filling and easy - goes great with chicken, steak, fish, anything

good smoothie
1 cup nonfat plain yogurt (or substitute with a flavored nonfat yogurt, gives a little more carbs) 1 banana, 1/2 cup of frozen berries of any kind. So good. Great after a workout. Add some low/non fat chocolate milk if you don't have any protein powder, it makes a great after work-out drink.

Ive been exprimeting with vegetabe smooties.

No luck.

Ok so here goes from the Veggies, ugh, girl.

It seems the overall vote is for raw veggies.

Here is the list of the veggies I do like:

I like salads with any kind of lettuce, baby spinach, carrots, celery, cucumbers and red cabbage - dressing - olive oil and balsamic vinegar and a little garlic salt

Cooked veggies I will eat:

carrots (my favorite), peas (love them fresh out of the pod too, yum), green beans (although they are kind of bland tasting. I put a little butter and honey on them) and I just tried winter squash this fall (cooked) from a friend's garden - not bad. Also I add onions to different dishes but don't eat them.

Sorry, I do not like asparagus, broccoli, brussel sprouts, cauliflower or any beans (unless they are in soup) and especially no peppers of any kind or color

Fruits I do like: - mainly in the juicer at breakfast - apples, oranges, pineapple, strawberries, blueberries, cantaloupe, pears. Also bananas

As for my favorite food - pasta

And no, I am not a child. Over 50... and I know several people who are'nt terribly crazy for veggies

As for my favorite food - pasta

Just a quick thought about the pasta. I am in the middle of a lifestyle change myself and I haven't been eating pasta. My wife is a big fan of pasta and she is trying to make better choices, as well. We have been picking up Barilla Plus pasta instead of the regular pasta. The Barilla Plus is multigrain pasta with omega-3 and significantly more protein. I have tried it and did not really taste a difference. If pasta isn't something you will be able to limit, it might be a good idea to incorporate this into your lifestyle. Good Luck!!

Yea and substitute any white sauces for red.

Pasta isn't all that bad. The only problem I have with it is estimating calories.

I have a hard time calculating it too. I love spaghetti and meat sauce but its hard to me to tell just how much if everything i'm getting... it would be a lot easier if it were just me then i could measure it before i even cook any of it but since i make enough for 4, how do you measure groundbeef when it's in spaghetti sauce? spaghetti seems to be my downfall anyway... i can never get enough!:drool5:

Hey Jay26. Thanks for the post.

I have tried the multi-grain pastas. They really arent' too bad. But right now I am mixing them (1/2 multi - 1/2 regular). Just can't do the multi straight - did try it though. Can't get used to it just yet. Baby step..you know.

As for sauces, I make my own homemade red sauce. I do love the white sauces... alfredo, yum! But haven't had any for years.
