Ok, here's another idea for squash ... one of my favorite things about winter!

Take an acorn squash and cut it in half. You'll need a sharp knife and a bit of strength - the skin of an acorn squash is tough.

Scoop out the seeds and string from the middle - use a spoon and just scrape away. It'll come away pretty easily.

Put about 1/2 inch of water in the bottom of a casserole dish and put the squash cut side down in the water.

Roast in the oven for 30-40 mins. Test it by flipping over the squash and poking it with a fork - you want it tender all the way down to the skin.

Remove from the oven and let it cool for a few minutes. Then using a spoon, scoop the flesh into a bowl.

From here you can go one of two ways:
drizzle with olive oil, sprinkle with salt and pepper or a little shredded parmesan cheese (the real thing, not the stuff from the green can).
~or~
sprinkle with some brown sugar, cinnamon, and maybe a little ginger, or flavor with honey and spices

I personally like the savory version, but some people like it sweet with the cinnamon or honey.

Acorn squash is one of my favorite winter squashes.

Most veg can be roasted in the oven - toss them with some olive oil, salt and pepper, and whatever spices you want, spread them out on a baking sheet, and bake them in a 400 oven for 20 mins - or even longer. Sometimes I like to cook mine until they're a few steps away from burnt - I like the crunchy bits. Broccoli does this really well in fact. And I love roasted cauliflower. Mmmm.

Dinner tonight was grilled chicken, baked sweet potato and roasted broccoli. VERY yummy.

I can't believe I'm losing weight eating like this and it tastes ten times better than the junk I was eating before.

I had a friend over for dinner the other night and I made grilled salmon, brown rice and grilled asparagus. It was just delicious. They kept just shaking their head saying 'you're eating like this and losing weight??'

It's crazy. I've never eaten so good in my life and the weight seems like it's falling off me.
