I know you like to get your kids involved with your workouts, and that is fantastic! It's too bad more parents don't do that. I think there would be a lot less overweight kids if they did.
I was checking out the U.S. Gov guidelines for fruit and veggies, and it recommeds getting 2 cups of fruit per day, and 2.5cups of veggies per day. I think that would be a great challenge b/c I know lots of people don't eat enough fruit and veggies on a daily basis. I am sometimes guilty of this. It doesn't even have to be different kinds, just that you get them in..lol. However, I think the veggies would need to be the non-starcy kind. I.e--potatoes and corn are not included in this..lol. And fruit has to be fresh--not canned with sugary syrup or fruit roll ups..lol.

Your idea with the recommended fruit/veggie thing is a good one. I imagine that will be the one that most everyone will go for.
Personally I get almost all of my veggies but not nearly all of the fruit. So would be a good challenge.
