Sport Frozen Chicken Breasts

Just a couple quick questions about frozen boneless, skinless chicken breasts (I buy Perdue)

Do the serving sizes on the nutritional label refer to the weight of the chicken as it is in the bag or weight after cooking?

...and is it possible to get it to the internal temp recommended by the manufacturer (170 degrees) without it having the consistency of a hockey puck?

I believe the macro breakdown and serving size is based on being in raw form.

I cut my chicken up into cubes, then pan sear it with some PAM (if I'm not grilling). I find that it keeps the chicken more tender this way.

I want to say it's the weight before cooking. Either way, I don't think the difference in weight is by a whole lot before and after cooking.
