Retro Party Eggs

My wife uses this 70s recipe from her aunt in Chicago whenever we have a family gathering. Pretty simple and always popular! (the food, not my wife!)

Ingredients

  • 10 hard boiled eggs with shells removed
  • 6 tablespoons reduced fat mayonnaise
  • 3 tablespoons light salad cream
  • 1 teaspoon piccalilli
  • Pinch of smoked paprika
  • Sea salt and freshly ground black pepper to taste

Instruction

  1. Halve eggs with a sharp knife
  2. Carefully remove yolks and place in bowl
  3. Add mayonnaise, salad cream and piccalilli to bowl of egg yolks, then blend with wooden spoon until even consistency
  4. Add salt and pepper to taste
  5. Place mixture into piping bag with large nozzle
  6. Pipe mixture into halved egg whites
  7. Place onto serving dish
  8. Dust with paprika
  9. Try not to eat them before serving!
