Diet Gazpacho Soup

A fantastic, refreshing soup that is healthy, low calorie and loaded with nutrition! I got this from my trainer and love this recipe, especially on a hot summer day!

Ingredients

  • 1 chopped cucumber
  • ½ chopped yellow onion
  • ½ seeded chopped green pepper
  • 1 garlic clove
  • 1 quartered vine-ripened tomatoe
  • 3 cups tomato sauce
  • 4 cups chicken stock
  • 2 tablespoons red wine vinegar
  • Salt to taste
  • 2 tablespoons olive oil
  • 2 tablespoons extra-virgin olive oil
  • Cilantro (Optional)
  • Avocado (Optional)

Instruction

  1. Chop and/or mince all vegetables.
  2. Reserve ½ cup of the cucumber for garnish.
  3. Place the remaining cucumber and all ingredients except for salt/pepper and olive oil in a food processor.
  4. Blend ingredients until smooth.
  5. Season with salt and pepper.
  6. Chill one hour.
  7. Ladle into serving bowls.
  8. Garnish with remaining cucumber and cilantro.
  9. Drizzle with olive oil.
  10. Optionally add sliced avocado.
  11. ENJOY!
