Cucumber Salad with Oranges And Mint

Very invigorating salad from Robin Miller of High Five!

Ingredients

  • 1 English cucumber, sliced into rounds
  • 1 (12-ounce) can mandarin oranges, drained
  • 1/4 cup fresh mint leaves
  • 1 tablespoon sherry vinegar
  • 2 teaspoons olive oil
  • Salt and ground black pepper

Instruction

  1. In a large bowl, combine cucumber, oranges, mint, vinegar, and oil. Toss to combine. Season, to taste, with salt and black pepper.
