These cookies are packed with the protein and fiber that your body needs to make it to lunch! They are great for breakfast, or a quick snack!
Ingredients
- 1 1/2 cups brown sugar
- 3 cups all purpose flour
- 2 cups quick oats
- 1 tbsp baking soda
- 1 tsp baking powder
- 1 tsp ground ginger
- 1/2 tsp ground cloves
- 1/3 cup ground almonds
- 1/3 cup wheat germ
- 1/3 cup ground flax
- 1/2 cup oil
- 1/2 cup apple sauce
- 1/4 cup water
- 3 eggs
- 1 1/2 tsp vanilla extract
- 1 cup golden raisins
Instruction
- Preheat oven to 350 degrees.
- Line two cookie sheets with parchment paper.
- In a large bowl mix together sugar, flour, oats, baking soda, baking powder, ginger, cloves, flax, almonds and wheat germ.
- Make a well in the center and add oil, applesauce, water, eggs and vanilla to the center and mix.
- Stir in raisins.
- Scoop out 2 tablespoons of cookie mix per cookie onto cookie sheets.
- Flatten with the back of a spoon to desired size (cookies will not expand).
- Bake 8 to 10 minutes.
- Allow cookies to cool for 15-20 minutes. Individually wrap and freeze for morning breakfasts.
