This recipe is designed for a treat in between meals, or as a meal on the go.
Ingredients
- 1/2 cup flour
- 1/2 tsp cinnamon
- 1/2 tsp baking powder
- 1 1/2 cups mixed dried fruit
- 1 cup quick cooking oatmeal
- 1/3 cup peanuts
- pinch of salt
- 6 eggs
- 2/3 cup packed brown sugar
- 1/2 cup peanut butter
- 1 tsp vanilla
Instruction
- Preheat oven to 350ºF.
- Spray a 9 x 9 x 2 inch baking pan with spray.
- Combine all dry ingredients; flour, cinnamon, baking powder, and salt in a medium bowl.
- In the same bowl, add dried fruit, oatmeal and peanuts.
- In a large bowl, beat together eggs, brown sugar, peanut butter and vanilla until smooth.
- Stir in dried ingredients.
- Pour into sprayed pan.
- Bake in oven for about 20 to 25 minutes, or until the inserted toothpick comes out clean.
- Cool on wire rack.
- Cut into 12 bars and serve.
