Ingredients

  • 1 1/2 pounds tomatoes, diced
  • 1 15-ounce can black beans, drained and rinsed
  • 1 cup cooked yellow corn kernels
  • 1 medium jalapeño pepper, seeded and finely minced
  • 1/2 cup chopped red onion
  • 2 cloves garlic, chopped or crushed
  • 1 cup minced fresh cilantro
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon honey
  • Hot sauce, cayenne pepper and salt, to taste

Instruction

  1. Combine all. Refrigerate 2 hours to let the flavors combine. Serve with baked tortilla chips or low-fat crackers
