Ingredients
- 1 1/2 pounds tomatoes, diced
- 1 15-ounce can black beans, drained and rinsed
- 1 cup cooked yellow corn kernels
- 1 medium jalapeño pepper, seeded and finely minced
- 1/2 cup chopped red onion
- 2 cloves garlic, chopped or crushed
- 1 cup minced fresh cilantro
- 1 tablespoon extra virgin olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon honey
- Hot sauce, cayenne pepper and salt, to taste
Instruction
- Combine all. Refrigerate 2 hours to let the flavors combine. Serve with baked tortilla chips or low-fat crackers
