Weight-Loss Water weight?

In the past I went from 190 to 110, size 2 jeans...I was incredibly fit! legs of steel, everything was tone except for my tummy... After the weight loss I kept it off for maybe 1.5 years. I lost all my weight through portion control and excersize. Eventually I went to college, worked with children, stress ate and excersize became a thing of the past :/ ...
My dad just passed away :( and I stress ate quite a bit plus the recent holiday weight right after and now im up to 130 size 9 jeans and growing! Im bummed, I have cellulite on my legs, my tummy is just purely disgusting...its bad.

When we came to the new year I decided to get back into a heathy lifestyle. Im cutting portions and eating fruits and veggies! Im doing well. I noticed this AM I was 127.8...I was thrilled! But then tonight I got on the scale and I was 131 again...im puzzled!??

Could it be water weight? And could it amount to a 3lb difference!?

I'm not big into salt but I do add it my salads which ive been eating more of (I use vinegar salt and pepper) ...could the salt have caused the big water weight gain? Any other explainations? Should I be concerned?

Just thought it was strange, and to be honest it felt disapointing lol.
 
food weight (eating/drinking vs toilet activity has an impact)
water weight eg gains due to time of month (TOM) - women gain around the time of a period
also sodium has an impact.

If you log your food for the day on a tool like www.fitday.com you can see your sodium level to see if sodium is a likely reason for your gain.

I gain for instance every time I eat bread or cheese...

If I go high sodium I gain tons of weight.

An extreme example of a sodium gain took place when I had an emergency operation in 2008. You can see that I suffered a massive weight gain despite eating next to nothing for several days due to the saline drips... There was even sodium in the pain killers that I was given that delayed my return to a happier weight. The stats are on this and the next page of my diary.
