So please any tips would be beneficial.
thank you for your time.

I like eating brocolli, cauliflower, and spinach. Mushrooms also, is that a veggie?

I usually mix brown rice, chicken or steak, veggies above, and some kind of sauce in a huge bowl and go to town. The sauce, rice, and meat go great with the mentioned veggies.

Hahaha, simple man. ready? Try cutting back on your diet a LOT, then ANY food will taste good. If you are really hungry and tell yourself that the veggie is good, after awhile it will taste good.

lol yes, mushrooms are a veggie. A good way to make veggies taste better (although I love them by themselves :) ) is to melt some fat free or low fat cheese on them. You can also throw them into a homemade soup or chili, to which you can always alter to your liking. I wouldn't recommend staying away from them. They have so many upsides. Like the guy above me said, you'll get used to them, just give them time. Try this recipe for chicken chili. It's virtually fat free and is full of protein and fiber:

Chicken Chili with Black Beans
Servings: Makes about 7-8 cups

INGREDIENTS
3/4 pound boneless, skinless chicken breast, diced
2 cloves garlic, minced
1 can (28 ounces) tomatoes, cut up
1 1/2 cups black beans, cooked
1 cup onions coarsely chopped
1 cup celery, sliced
1 cup sweet green peppers, diced
1 jalapeno pepper, seeded and minced
4 teaspoons mild chili powder
1/2 teaspoon dried oregano
8 ounces yellow summer squash, halved lengthwise and cut into 1/2-inch (1-cm) slices

PREPARATION:
Coat a pot with nonstick spray and warm it over medium-high heat for 1 minute. Add chicken and garlic, and sauté until chicken is lightly browned, about 3 minutes.

Add tomatoes, beans, onions, celery, sweet and jalapeno peppers, chili powder, and oregano. Bring to a boil. Reduce heat to low. Cover and simmer, stirring occasionally, for 15 minutes. Add squash. Cover and simmer, stirring occasionally, until squash is tender, about 10 minutes.
