Unexpected weight gain, now I can't lose it!

Hello. So, last summer I finally lost my post-baby weight and then some! I felt great and kept it off for most the year without much effort. Around May, I noticed I had gained about 5 lbs. Perfect timing to start hiking again, which is how I lost in the first place. I live in a mountainous area, so hiking here is pretty intense. I go for about an hour 5 times a week and usually take my daughter in a pack (she is 28 lbs), definitely a good workout.

After I started hiking, I notice I had gained more weight! I got so stress and depressed, stopped hiking as much. I finally got my anxiety under control, but I realized I gained 20 lbs!

I started hiking again 5 times a week, reduced my calories, avoiding carbs (with the expection of homemade thin crust pizza on Friday!!), and trying to reduce sodium. It's been a few weeks now and nothing, the scale has not moved. I'm not gaining weight, so that's a plus! I'm trying to stay positive, but I'm just really confused. It feels like a weight loss plateau but I just gained it!

I've tried some herbs to reduce water retention in case that's it. I increased my water intake. I have thought about it being my thyroid, I haven't been able to get it checked yet but I've been trying yoga and herbs to help with that. Nothing seems to work. I also seem to be having symptoms of both hydro and hyperthyroidism so I'm a little confused/suspicious of that.

I'm 5'6" and normal weight for me is 130-140, I weight 155 right now. Any thoughts or advice would be appreciated, thank you!

how much and what are you eating on a daily basis? Are you tracking those things?
Do you know how much you can eat to lose weight?

My guess would be around 1500-1700 calories to see reasonable progress...

Yes, I use myfitnesspal and my goal is around 1,300. My appetite has been really low (which is common for when I hike) so I have to force myself to eat some meals.

And as far as what I eat oatmeal almost every morning, blueberries, bananas, probiotic shakes (lunch). Dinner varies, usually meat with either veggies, beans, or a salad. I normally would eat more pasta, but I haven't been.

I don't eat much sugar other than fruit. I have been taking Holy Basil for stress and that seems to help a lot. I may take a couple days off hiking and see if that helps, I'm really sore today. I aim for 8 hours, sometimes really difficult with a toddler, but I've been sleeping fine lately.
 
Also, I just took my measurements and I have lost inches. I looked back at some old records from last summer and I'm at the same place inch-wise but 12 lbs heavier. Is this weird to anyone? Where is the weight?
 
Muscle in your kegs from carrying whilst hiking.

You best bet would be to de focus from weight and focus on measurements and your reflection in the mirror :)

You're right. I just didn't expect to gain that much muscle as I already feel I have a lot of leg muscle. I probably just need to relax a little bit..
