Trying for 2 pounds/week & not getting results

Hey there,
I eat a healthy, "clean" diet. I have been walking 2 miles everyday. I have been decreasing calories, sweets, alcohol, bread & dairy, while increasing plant proteins. I have been very diligent for the past 5 weeks... With a goal of losing 2 lbs/week. After 5 weeks of working hard I've only lost 3 pounds & gained 1 back. Very discouraging. My start weight =141 and I set my goal to lose 2 pounds / week for 8 weeks.
Typical breakfast=green smoothie
Lunch=salad
Dinner=lean protein, fish or chicken, veg, brown rice
Water, water, apple cider vinegar
Any suggestions on how to shift a few pounds?
