Sport to much vegetables

hey everyone this is a question for my father. Hes been cutting and lost a good 20 pounds in 2 months and hes started eating more steamed vegetbales than normal. He says that he thinks you can "overdue" it on eating anything but is it possible to really ahve to many steamed vegetables at dinner....such as squash cabbage and such. He usually has this with some chicken or steak but lately he has been lowering the portions of meat and eating more vegetables.
 
Veggies are very low on carbs and don't have too much sugar + they have a ton of nutrients. But some are very starchy such as white potatos.
