1 cup of red lentils
1/2 cup of dried yellow split peas
Tin of chopped tomatoes
4 carrots
1 large onion
2-3 cloves of garlic, chopped finely
1-2 red chillies, finely chopped
1-2 green chilies, finely chopped
1/2 cup frozen peas
2 tsp curry powder
pepper
2 bay leaves (optional)
Approx. 2 litres of water
Plus any other veges you want, such as
mushrooms or corn kernals, an extra tin of tomatoes or fresh ones
Wash the lentils under water in a fine mesh strainer and place in a large saucepan. Add the water and bring to a boil, add tomatoes, carrots, sliced onions and bayleaves. Boil for 45mins or so, stir frequently to stop lentils sticking to the bottom. Reduce the heat and add more water if nessesary. When simmering at remaining ingredients. Simmer for another 15 minutes.
You can add or remove anything from this recipe, its very much a if-you-like-it-throw-it-in recipe.
