Target areas and meal timing...

Two questions:

1) While my overall goal is to improve my figure, my most specific goal is to slim out my buttocks. I know you can't spot reduce and that the only sure way is to slim down overall, and eventually the areas you want to see improvement will be worked on.

What I want to know is this: What are the ass cheeks mainly made of, muscle or fat? The answer to this question will determine my calorie intake and level of resistance training, ie. whether I want to lose fat exclusively, or some muscle as well. Now, without wanting to be too graphic, I'd describe my ass cheeks as being fleshy, with some jiggle if you tap them! :D

2) I finish work in the evening at 5 and am home by 6.30. Two nights a week I go to the gym for a pretty intensive workout, I leave the house at 7.15 and am home by 9.45. I go to bed at 11.

What I want to know is this: When would you advise I eat my evening meal on these days, before or after my workout? And IF after, what is there to be said about consumption of carbs at that time, and just after a heavy workout?

1) Both. But mainly muscle. Avoid trying to lose muscle as this is what keeps fat away! Concentrate on toning the 'bits' that wobble :O)

2) Late night eating is not ideal as the food will just sit in your stomach. Eat more in the afternoon by taking your dinner to lunchtime. This is what I do and I find that I'm actually not that hungry in the evening. If I do fancy something, it'll be something light - i.e. a homemade dip with flax or spelt crackers.

Would eating more at lunchtimes be feasible for you?

What about going straight to the gym from work and getting home earlier or is this not possible?
 
1) I know that the glutes internally are a muscle, sure, but I'm really talking about the soft fleshy mass that protrudes through your trousers in work lol! Is that mainly muscle or fat? That's the bit I want to lose! :)

2) I understand late night eating is not generally advised and I usually try to eat earlier in the evening, around 7, when I get in from work. What I'm ask is can an exception be made in specific instances right after intensive cardio excercise? If not I could always eat a little more at lunch and maybe have a bowl of chicken and vegetable soup after training or something, just interested in knowing what my options are
