Hello,

I'm hoping to get some advice here.
For a 32 year old woman I'm rather embarrassed that this is an issue for me, I've just never stocked up on healthy fruit and veg.

My last diet I tended to get things as I needed them and avoided things like cucumber because they are long and I end up throwing it away and wasting it.

Now that my son is 2 and eats what we eat plus a baby on the way... I need to get my act together.
My last diet worked well for me but now I have a family I need to think of as well.

Storing of vege's and fruit, are their any sites out there that are good, my google searches have come up badly.

For example, I think I know its best to store radishes in the fridge in a bowel of water but how long until they go bad.
If I slice whole cucumber and put it in the fridge in a container, how long will it last?

I did food hygiene courses in the past which were great but they never really went I to detail of storage, just preparation.
I also didn't grow up with the best education regarding eating habits. I can't blame my mum really as her childhood was unthinkable and some of this carried into her parenting in the extreme opposite of what her extreme life was like.
I told hubby from the start that he's in charge of nutrition for our kids as I just don't feel I will be good at it. For example if he says no to treats then its a no, I might say yes every day to biscuits and cake, he's already told me not to give too much juice, a glass with breakfast and that's generally enough for a day. I only ever see French people with juice in the mornings.

Anyway... Any help here would be appreciated. If I can store my healthy things and make sure we eat them before they go bad its better for us as a family and also better that I don't waste food. Waste is never a good thing.
 
I am not the best expert in stuff like this myself...

For me - I slice up things like cucumbers, peppers, tomatoes each time that I make a salad so have no idea how to store the sliced stuff... I tend to put things in the fridge when I get them and chop a bit off when I make a meal...

We have pretty big portions in most people's terms so a cucumber does well to last three meals - and that is with just me having some as Rod does not like cucumber...

In fact - our portions of the healthy stuff are so large that we do not have too big a food storage problem at all...
 
Maybe I should just do it that way and chop / slice as I make.
Hubby is also fussier than me when it comes to healthy things to put I salads,
He won't eat cucumber or peppers. I'm guessing ill have to add lots of potatoes or pasta to his and my kids salads than my own. I can't just put everything in a bowel, I have to do it plate by plate
 
The important thing with salads is to watch out for things like mayonnaise and dressings and these deli counter treats for salads that can have loads of stuff like oil in them... They can shoot the calorie content of a salad up so that it becomes a high calorie meal...
 
That is so true,
My safest option which I go for the most is a tiny bit of olive oil with some balsamic vinaigrette, very tasty but boring if you do it every day.
I like the idea of yogurt dressings. Last time I got low fat natural yogurt and mixed in some finly chopped onions and herbs, you get a creamy texture like mayo but its better for you.
I do the same for curry, use a yogurt base with curry spices.
