With a good non-stick pan I don't even use oil. I have made several of the stir fry recipies from this site and they were all made in a large pan with no/or just a dab of corn oil.
Oh I would LOVE to own a good quality wok. I just dont have room in the kitchen for more stuff. And if I get more stuff the wify will have me adding more cabinates. I just finished comepletely renovating the house by myself from the frame up and I am not adding more kitchen storage ... so no wok.
butter or margarine instead of oil works nicely and gives w/e you cook a different flavour.
some stir fries you can get away with just using water and soy sauce or balsamic vinegar instead of oil. if the pan is a good non-stick one you should be fine.
