Hi, I am currently around 5ft8 (172cm) and weigh about 14st and 5 pounds (91kg) Yesterday i decided to start to lose weight as for quite a while i have lived off foods like Pizza, Chips, Bread and stuff like Dr Pepper. I am fairly inactive so thought that I would just start with a diet. On the first day i had around 750 kcal worth of food and only drank water, i was planning on sticking to the amount i had eaten with maybe a little more because i felt quite full at the end of the day.

I had-
Monday 05/03- (only drank water)
2pm- Heinz Chicken and veg soup 200kcal
2:10- Apple 50kcal
6:30- Beef Hotpot with extra Carrots and Peas 368kcal
6:55 One Rice Cake 30kcal
7:10 Bannana 105kcal
TOTAL:753

I started to look some information up today and have found out that I should be eating around 2000kcal to lose around 1-2 pounds a week.

On the second day (today) I have had-
Tuesday 06/03- (only drank water)
12:00- Heinz chicken and veg soup 200kcal
12:20 Apple 50kcal
2:45- Bannana 105kcal
5pm- Yogurt 175 calories
5.45pm- Chicken Tikka and Rice 692kcal
TOTAL:1222

I dont feel like i should eat anymore, but a lot of places are saying 2000 calories is the healthy amount, can i stick to around 1200-1500 calories? any help would be greatly appreciated.

1200-1500 should be fine, I would suggest aiming for the higher end of the range to begin with. Calorie needs are not precise, so a little experimenting is needed. Reduce calories slowly until you begin to loose and stick to that number until you stall and then reduce calories further at that point, because as you loose more you will need less calories over time.

Thank you very much, i will aim for inbetween 1200-1500 then, maybe a little closer to 1500, actually eating breakfast should do the trick, if i start going the gym/ jogging, would you suggest i up it to 2000?

A lot of people will suggest eating back exercise calories, but it is not always necessary especially if you have a lot to loose. However it does give you the option to eat a little more if you are seriously hungry after exercise, but never more than the exercise calories used.
