Hi there!
I love, love, love soup! Homemade - nothing from a can or sachet for me!
Yesterday I made come carrot and coriander soup... (Shallots, carrots, ground coriander, vegetable stock cube, water, fresh coriander and reduced-fat creme fraiche, teeny bit of olive oil if you're interested )
Now, by my reckoning, the whole pot had around 400 calories and I got 3 good servings out of it. Had it for lunch and dinner tonight and the (perhaps not so) strange thing is I'm stuffed! And the very strange thing is (coming from me, this is strange!) I'm struggling to eat enough!
So, I'm gonna lay off the constant soup eating and stick to the usual good stuff (chicken, fish, veggies, fruits, Weetabix etc etc) so I can get enough calories in me!
But this got me to thinking... I know most people plan their treats/cheats into their routine, so as not to go over their calorie allowance (as do I!) But having some soup around on a treat/cheat day would be a good way of filling up with very few calories so you can really enjoy that big piece of gooey chocolate fudge cake!
I guess what I'm saying... albeit in a very long-winded way... is that soup fills you up and doesn't have a lot of calories!
P.S. Full of fibre too so it, erm... 'cleans you out' a treat!
