you mean cheese made from skim milk vs. regular milk?
it shouldn't be that far off, ounce per ounce, compared to non-fat cottage cheese.
big thing to watch for is anything they add to your skim cheese...like hydrogenated fats, a ton of sodium, or lots of preservatives.
that said, a good diet should be able to include regular, normal fat cheese, in moderation. a good diet isn't 'low fat'...its 'balanced, healthy fat'...and if you're not eating processed foods, you should have room for an ounce of natural cheese on most days.
