Reduced muscle size/fatigue

I have been regularly going to the gym (5 times a week) for the past month. Whenever I go, I would do circuit training which consists of three sets of bench press, pull down, curls with 8 reps. I would also run on the treadmill for ~20 min. I remember during my first week, I've noticed that after I have finished my workout, my muscles will still remain flexed for quite some time. Now after my workouts, my muscles do not seem as flexed as before even though I have intensified my training by lifting heavier weights and doing an extra set. Is this normal?

In addition, during my first week, my muscle never really got extremely fatigued. For example, during my first week, while I was on the 6th or 7th rep, I could feel my muscles get tired but I could still continue if I wanted. Now, even on my 5th or 6th rep my muscles are really tired and shaky, and it feels like it takes an enormous amount of energy to finish my set. I was thinking of taking creatine and I was wondering if this would help me?
 
How much are you eating? Problems with energy levels or strength loss usually come down to undereating rather than under/over training.

Give us an idea of your height/weight/age and daily calorie intake, usual diet etc to work off

I don't follow a strict diet, but this is what I usually eat:

Breakfast: Ham, egg, toast
Lunch: Peanut Butter & Jam Sandwich X 2, Mug of water or tea
Dinner: Stir fry or assortment of meat/vegetable/rice/pasta, orange juice

I also sometimes have a snack or two in between meals. They consist of fruits and nuts
