Sport Raw vegetables

i've been working my diet around the least amount of cooking without sacrificing any nutrients, and there inlies my problem. can someone list some vegetables that you can eat raw w/ out any preparation at all? all i can think of is carrots atm, and i don't know if broccoli and cauliflower is edible when raw.
 
broccoli, cauliflower, sugar snaps peas, green beans, lettuce, bell peppers, tomatoes, cucumbers, jicama, turnips, yellow squash, zucchini

All of these can be eaten raw. Granted you may need to "prepare these" by washing them and either peeling or cutting them, but that really does not take that much effort. They also may taste better if you cook them, but its fine to eat them raw. If you don't want to sacrifice nutrients but are willing to do some cooking, I believe steaming these vegetable is a good way to prepare them.
 
As I understand it, green vegetables, especially spinach and broccoli, are healthier raw than cooked. Spinach is good raw in sandwiches and salads. However I have mine, I like it mixed with some extra virgin olive oil, also uncooked. Steaming is supposedly the best way to cook broccoli without screwing up its nutritional benefits too much.

Carrots, tomatoes, and onions, among others, are foods that supposedly are no less healthy cooked than raw. In fact, cooking apparently raises the bioavailability of certain nutrients in tomatoes and onions (although I'm not sure about carrots).
 
I buy bags of fresh works broccoli and cauliflower and I just eat them raw all day when I am snacking and they taste great. If you are going to cook them then always steam them and never microwave them. Microwave destroys nutrients to some extent.
