Questions about Routine and Diet for best health

Stats (33, 5'3", 145 )
-Diet (yogurt and apple for breakfast, occasional piece of whole wheat toast, orange and hummus sandwich for lunch, bannana in the afternoon, piece of salmon and salad, brown rice or quinoa for dinner, apple (this is an example of yesterday) about 1400 calories a day?)
-I walk a lot living in the city, about an hour a day just getting around. Every other day I have been riding my bike for two and a half hours on a bike trail out here, I believe it comes to 8-10 miles depending on how I choose to get to the trail from my home.
-I'm noticing although I feel my body is getting stronger, that I am having difficulty gaining muscle mass or firming up, esp. in my legs and butt area - Am wondering if this has to do with diet, and lack of sleep?
-I hope to get down to 130 and just loose the extra "me" in my belly and hips as well as tone up and be healthy
-I always keep active, but for the past month I have been conciously trying to improve my diet and get these bike rides in every other day to help with stress and get in better shape

Added note.....I have had a habit of having a couple of drinks an evening, in the summer since it is hot this has been beer, but I have realized I must cut this out of my diet as it is counter productive! :)

My main question is regarding concern for the lack of visible change in muscle tone.......I never really get tired from these work outs, I don't think I was ever "out of shape" and do push myself going up hills and such at a reasonable level, but I feel I must be doing something wrong. So far I have lost ten pounds in about two months.

I also don't think I eat enough protien? the diet sample above with the salmon, I would have that as a special treat maybe once a week......I was a vegitarian until recently when I decided an occasional piece of fish would be good for me.

Do you have any food restrictions, things you wont eat?
Do you have access or the ability to purchase exercise equipment for resistance training?
Have you ever logged your eating on a day in day out basis?

Basically I think that you are on the right track and need to tweak a few things here and there to get from little change to the big change that will make you happy.

Hi. Nothing I can't eat. :) No allergies or medical conditions that restrict that. I am going to join the gym this week for access to weights.

In my diary, I've been trying to keep track of what I eat.....
I've been adding it up and I have found that around dinner, often I realize I have only had about 800 calories that day, which I don't think is very smart....so I am trying to work on that.

I've been drinking a lot of fruit tea and water, and I've noticed it actually making a big big difference.
 
Okay well here are a few suggestions to help you get started on the right track.

-Start to keep more precise calculation of your food intake. A program like fitday can make this easy for you. . DO NOT go by their caloric recommendations and calories burned, just us it to log food. Their calculations are VERY wrong.

-Start working on a full body resistance program at least 2 days a week to help maintain or even build a little muscle. This will give you a better overall look, caloric burn, and strength.

-This is a great start for figuring our your caloric intake and roughly how to shoot for what and how to be eating, also attack the protein issue you brought up.


Basically my only concern for you in the future is you getting stuck when you hit a point because you calories are a bit low or regain coming because of your low calories. So what I would do is the best you can try and lose as much weight as possible while eating as much as possible.
