I watch my vitamins and minerals closely and try my best to reach my RDA's daily. However, I have a hell of a time even coming close to reaching my RDA in dietary potassium!
I've read in various places that the recommended intake of potassium for adults is 3500mg. I average about 1750mg daily (in a 1400 calorie diet), which is ONLY HALF.
Is this something I should be concerned with? I have only once, ever hit the RDA of 3500mg, and that day, I ate an entire bag of frozen broccoli.
According to shit I have read, potassium helps your kidneys function normally. I highly doubt that the majority of the population gets the recommended amount of Potassium, and people aren't dying everywhere because of potassium deficiency.
Am I missing something? Why is the RDA so freaking high? If I really need it, what can I do to get 3500mg of potassium without eating 4 huge baked potatoes per day!?
