Sport olive oil fat question

yes i acutally have a question, just curious about..
now we all know olive oil has good fats in it, Im just a bit foggy about this I think that when you cook with olive oil most or all of the good fats cook off and evaporate, just confirming this don't feel like looking it up atm.

Q: do good fats from olive oil burn off during cooking?
350 F degrees - 5-10min

I think taste is the worst aspect to cooking with olive oil. As for saturation of the FA chain, I think it happens to an extent, and the same thing with the cis-trans conversion.
 
if you had to drink a out of the bottle raw 5oz of A: olive oil, or B: flax seed oil, which would you choose? pure taste / texture is the only factor?? lol olive oil over flax anyday from taste
