I have hit a snag on the Cohens journey - the scales are not budging and I know a loss is a loss but 200gm in a week is disturbing!!!!! :mad: So to keep myself motivated I am after some inspiration in the kitchen to mix things up a bit. I have tried most of the recipes from website and plus some, but too be honest I am BORED with what recipes I have. If I eat one more serve of cauliflower and chicken I will go crazy :eek:, and hubby has complained about the smell of cauli in the kitchen reminds him of an old farmers wife (he is from depths of Ireland so god knows what image he has in his head :p )
Tried spinch and feta for lunch today and still regret the choice, I am so mad with myself that I have decided never to have feta again whilst on the program because every time I use it I stuffed it up.
So if your having success in the kitchen I need your ideas. Breakfast is covered thanks to my yoghurt and apple but lunch and dinner ideas yes please.:)

Have you tried some of the recipes from the thread in this forum (page 2 I think) these are recipes people in the forum have posted ..some of them sound pretty good also in that thread dizzy had posted a link to a website with some great recipes.

I came across this link ages ago. Its from a chef who was preparing meals for her daughter who was doing something that soundsalot like Cohens. Just be careful of some of the ingredients and quantities eg she uses 20ml olive oil every now and then! It includes photos and some of them are great. If anyone's interested try

I try not to spend too much time in the kitchen preparing lunches for work I usually just have mozarella or tune on crackers with cut up cucumber and celery sticks,fave on the weekend is pizza, mushroom , capsicum, tomato, onion mozarella on crackers grilled.
For dinner lately I have been making rissoles, minced meat with salt, pepper, oregano chopped onion, I usually have these with stir fry vegies or on salad.
I do the same with chicken, I have gotten most of my ideas from the website.
Oh and another all time favourite is stuffed capsicum , minced meat with chopped zucchini, mushroom and onion stuffed into half a capsicum and topped with grated cauliflower baked in oven.
I don't have feta often but when I do, i only have it in a greek salad, tomato, onion, cucumber, lots of oregano a bit ofolive oil spray -yummo

Thanks girls for your help I got some great inspiration from the websites and went to the market on the weekend for all the a big shop. Its all cut weighed and in the freezer ready for use. I think just the revisiting the food choices and revising my menu has been enough to keep me on the straight and narrow. Not that I was considering deviating but godness it was a mentally tough week for whatever reason. Thanks again :)
 
My fave recipe at the mo is:

Cooked beef or chicken, with stirfry veg, add mango and curry. Divine!

The other I absolutely love is the Cohens Rissoles.

Way to go on beating the mental challenge. Those weeks are the worst, and it truly is mind over matter. You're so close to goal.. way to go
 
I am finding it hard at breakfast time because I don't like Yoghurt, but I discovered curried egg
I hard boil and egg, add curry and my daily allowance of mayonaisse I have it on salada's with tomoato

Well, my favorite breakfast (can be used at other meals with higher allowances too) these days is fresh mozzarella balls (allowance) melted on top of cut up veggies like mushrooms, zucchini, pepper or slivers of tomato or spinach, a dash of salt, some garlic powder and oregano. Sauteed in frypan till the veggies wilt a bit and the cheese is all nice and gooey...with a bit of olive oil spray and it tastes like pizza! Sometimes I have it with crackers, -- its delicious!!!

Hope that helps. For me its either that or the egg with a bit of water and veggies to make an omelette.

I've also tried celery sticks with ricotta cheese but the celery is dense so its only a few pieces... simple though!

Some people have suggested mashed cauliflower with mixed cheese (allowed) melted on top that it tastes like baked potatoes but I havent tried that yet.

I just thought of something I haven't tried but now will just have to: put mushrooms, spinach, onion and/ or cauliflower and/ or zucchini in a food processor or blender, add mozzarella and/or ricotta cheese to allowance, italian herbs and spices... roll mixture into little balls or little patties and bake in toaster oven to warm it and melt the cheese... sounds yummy!
