I know oatmeal is 'good carb'.. how much is too much??

I have it as breakfast every other day and use 1/2 cupe of Quacker quick oats with 1 cup of skimmed milk and spice it up and top it with few pecans and 1/2 cup of raw blueberries.

Anyone else eats oatmeal for breakfast? How do you make it? whats the portion?

How much is too much depends on you. You have to figure what you're eating into your overall plan. For me, 1/2 cup of dry oats (2 servings) is a reasonable serving. It makes for a very filling breakfast, but as long as I watch the rest of hte day to make sure I don't overload on carbs, it's all good.

I eat steel cut oats, cooked in water and usually with cheese, salt and pepper.

Just so you know, oatmeal is not the same as oats and def. not the same as oats-so-simple! Oats-so-simple are oats which have been shredded down to a fine flour and have added milk powder added to them. Oat-meal is not the same as this, it has more bran.

It depends on your taste but the more you mess with a food, the higher its GI, if you have oats, have them as whole rolled oats, they will stick around in your stomach for longer and you wont feel as hungry as soon after.

You have to watch serving sizes: I just went through the Diabetes class at the V. A. and found out I was eating way to much even though I thought I was eating good! You should eat between 60 to 65 carbs at each meal you need per day 140 to 145 carbs with 90 to 100 protien and around 60 grams or less from fats. a serving of carbs is 15.
