I just bought some nuts to snack on, what do you guys think?

A made a mix of...

Honey roasted Peanuts
Roasted Almonds
Sun Flower seeds
Soy nuts.

is there anything I should remove, or does this sound like a good snack to help in the protein and healthy fat area?

I generally stay away from roasted nuts; added salt and oils.

I stick with raw almonds, pecans and sometimes cashews.
Sunflower seeds are good too but again try to get them raw and unprocessed.

If you looking for some protiens, have you considered pine nuts?
"Pine nuts contain about 31 grams of protein per 100 grams of nuts, the highest of any nut or seed. "

And walnuts are supposed to rich in good fats (omaga-3 and omega-6)
