Sport New to Board, ComplicatedNutrition Question Perhaps...

Hello Folks, my name is Chris and it is a pleasure to meet you!

To my question:

I am 23 years old, 5'10 at 173 pounds. I run medium to long distance (about six to eight miles 2-3 days a week) and cycle with my college team two to three times a week (usually do about 100-150 miles a week at paces of 18 - 22 mph). I also go to the gym Mon, Wed, Fri and do 45 mins of cardio followed by light lifting. I do yoga twice a week. I also go to school three days a week in the mornings, and work as a waiter in a busy restaurant four nights a week.

My problem is that lately I have ravenous hunger when night rolls around. i try to drink water, eat a handful of nuts, load up on fiber veges, or what have you, but its not enough. I literally go to bed fantasizing about food and get restless because im so excited to get up and eat breakfast. I eat very healthy, all day long. WTF?!?!?!

Days when I do bike and run (I do so on the same day, one in the morning, one at night, Tuesday, Thursday, Saturday) I eat anywhere from 2500 - 3500 calories.

Days when I don't run and cycle (Mondays, Wednesdays, Fridays) I go to the gym like i said and warm up with medium intensity cardio for 45 mins then lift light high reps. (Wednesdays include an hour of yoga) I try to consume 2000 - 2500 calories on these days.

Foods I eat:

Breakfast:

1/2 cup to 1 cup of oatmeal everyday. I eat more on a cycle run day.
1 Egg and 1 egg white, over easy.
Peice of fruit, usually apple or orange, banana on run cycle days.
Glass of soy milk

Snack: One of the following: Fruit, Hardboiled egg, Raisins, half of peanut butter sandwich on whole wheat, soy taco, tofu, peanuts.

Lunch: Salads with roasted chicken, turkey sandwiches on whole wheat no mayo, whole wheat organic pbj (usually washed down with a bottle of water, soy milk, and an apple)

Snack 2: Cottage cheese, tuna fish, peanuts... same tyope of stuff as first snack.

Dinner: On gym days I usally eat right after i work out. i usally make fresh fish fillets of orange roughy, cod, sole, tilapia, baked in the oven and wash it down with soy milk.

night snack: This is the worst one. I dont seem to want to stop eating when this snack rolls around. I try to stick towards portioned snacks like my previous ones, but im in the mood to eat like a whole pig or roast, which sometimes i do if i am not at work and have nothing to distract me while i have my eating rampage!

WHY DOES THIS HAPPEN!?!?! Healthy food is too dang expensive for me to eat it all up in the course of two nights. This has happened before, it sucked.

Someone help.
