Need help loosing 5 - 8KG

Hey everyone, this is my first post, although I've been reading and learning from this forum for a little while now. I am 5ft and 60kg right now, I would like to loose 5 kg in the next 7 weeks. I will be going on vacation in August and would really like to be able to go to the beach and do some shopping.

I was 65kg back in May, and was able to loose 0.5 - 1kg each week, through reducing my calorie intake to 1300 - 1400 kcal/day, drinking 2L of water/day and some exercise. I did the full workout video tape for Core Rhythm 4 - 5 times/week and 1 hour of walking 3 times/week, I also rode my bike to school each day, but that is only about 30 min there and back (15 min one way). I've been doing the same thing since the beginning of June but have not seen any loss in weight, I don't know what I'm doing wrong and would want to hear some suggestions on what to do?

I would ideally like to be 52kg, but my main goal now is to reach 55kg by the end of July, and slowly loose the other 3 kg later on. Do you think this is possible to loose 5 kg in 7 weeks?

Here is also an example of what I eat a day:
Breakfast: Plain Instant Oatmeal, and fruit (an orange, an apple or a banana)
Snack: Soy Joy Bar, or a fruit
Lunch: Green Salad, Ham sandwich with tomato and lettuce.
Snack: Tofu with soy sauce and Plain Yogurt with a little bit of honey to sweeten
Dinner: Fish, Salad or steamed veggies (ex. beans, broccoli, kabocha, zucchini, etc.), a slice of whole wheat bread or plain oatmeal

Also, since last week I have started to jog about 3 times a week. I don't have much endurance, so I'm starting it off pretty slow. Like last week when I started I did 10 min jog/3min walk/10min jog/3min walk/10min jog/3min walk and this week I increased it to 15 min jog/3 min walk/15 min jog/3 min walk. Is 30 minutes too little? I'm still very new to all this, so please tell me what I should do to become successful.
 
It sounds like you have a good plan and I think you'll be successful if you keep on the way you're going. 5kg is a reasonable amount of weight to lose in 7 weeks ... BUT ....

Here's the thing that makes this whole process frustrating sometimes. :)

The closer you are to a healthy weight, the harder it is to take off those last few kg/lbs. The general rule is that a healthy reasonable rate of loss would be 1% of your current bodyweight per week. For you that would be about .6kg. If you lose much faster than that, you'd have to really push hard - possibly past the bounds of being healthy.

But throwing in some extra exercise (the jogging) you might be able to ramp up that loss again, but I would caution you to not be disappointed if you don't - or to do anything unhealthy like not eating.
