I kinda made this recipe up one day when I had the craving for chicken parmesean, but i was not a big fan of the fried chicken.
So here it is...take it or leave it
Chicken breasts -- use a kitchen "mallet" to flatten/thin out the chicken breast to a desired size(thinner will mean bigger and it's amazing how one small chicken breast can expand w/ some "help" ) Season w/ black pepper and italian seasonings. Grill.
Preheat oven to 375 degrees. In a deepened pan, place a thinlayer of pasta sauce(whatever type you like) so the base of the pan is covered. Place the cooked/grilled chicken breasts into the pan. Use the rest of the pasta sauce to cover the chicken breasts(how much is at your discression).
Place the pan into the oven until the pasta sauce starts bubbling at the corners of the pan(usually in 5-7 minutes). Pull the pan out and place a little mozarella or parmesan cheese(ur discression again) on top of the chicken breasts -- pop back in and let the cheese melt....after that you are ready to go.
This isn't a perfectly "healthy" dish -- but its a good one to have a "breakup" in the normal routine
