Lost 10% of body weight in 2 weeks?

Hi all! I'm sorry for not introducing myself in the newcomers forum, but I just had a (not so) quick question.

I tried for about a month to keep my carbs around 75 g a day average. I still got cravings for sweets after dinner on the days when I had whole grain pasta or homemade pizza (once a week each, correct portions). I wanted to try something more ketogenic for a little while so see if I could get rid of these cravings as an experiment. I have been eating about 25-35 net carbs per day during this time. I've been eating an estimated 1400-1600 total calories per day.

I went from 126 lbs to 120 in the first 3 days. I didn't weigh myself for another week, but when I did I lost another 3 lbs. A few days later I weighed 115 lbs.

I live in the city and walk about 4 miles a day out of necessity. I go to the gym for about an hour or two 4-5 days a week.

Most people would be thrilled with this, but it left me bewildered. I understand a large portion of this must be water weight, however, I've been drinking nearly a gallon of water a day so at no point was I dehydrated. It couldn't all be water. I have had none of the side effects of ketosis, my breath tastes normal and I feel almost euphoric some days... plenty of energy and no headaches.

So what gives? When I readjust my carbs to more forgiving threholds (say, the original 75 g) will I instantly gain it all back? Did I have some sort of gluten intolerance before? Is this unheard of or have others had similar experiences? Any ideas?
